The Pit Boss did a great job on this Texas Style Smoked Brisket and the bonus it was a wagyu brisket from Drafth Family Farm! They gave it to me fresh and I just didn't have time to cook it that day so I had to freeze it. Well it oxidized a little but I cleaned it up some but that did not stop it from have a ton of flavor! Wagyu Brisket is already packed with flavor so doing it Texas Style is really all you need to do. The Salt and 16 mesh Black Pepper gives it a great bark a long with a balance flavor of goodness! The Pit Boss since the controller update just runs!! I am very pleased how the Pit Boss 1600 runs and it also is giving off more smoke!!! Rotisserie Prime Rib is one of my favorite things to cook because it is easy but on a Santa Maria there is a little more hands on during the cook. Redemption feels good and I am glad that the Meater worked this time! I can't really say if it was the way I placed the probe on the 1st cook or if it was just a fluke, only time will tell but there will always be a backup!! Just remember when you do a Prime it will have at least a 7-10 degree carry over so make sure you think about that ultimate done temp you want mean you got to pull it a little early. I'm on the Pit Boss 16600 and take the griddle and season it up! This is not a hard task just time consuming and depending on how much you want to season it the longer it takes. You just want to make sure you bake on a couple layers. It is preseasoned from the factory but it is not as good as taking some flaxseed oil and adding a little more season to it. Then cook some thick bacon on it and that will really give you a good dark patina season!! With the 1600 having this griddle insert it really does make it an all in one cooker! In this video I am on the Lone Star Grillz Santa Maria and I do a Prime Rib using the Rotisserie! Now this one to me is a fail mainly because the Meater and I failed!! Meat Started at reading 10 degrees higher and when I pulled the prime it was 15 degrees below my target temp. When I too this picture I did not double check the internal with my MK4 so I am a huge noob also, I know better!!! But the Santa Maria was a blast to run and the Prime Time is a perfect blend of spice for your prime rib because it tastes GREAT!!!!! I will redeem myself this Memorial Day Weekend and I am glad I filmed this test and shared my failure with you!! Today it is Reverse Sear Wagyu Ribeye Steak on the Pit Boss 1600 Pellet Grill time! I absolutely love doing reverse sear anything and doing it on a pellet grill using some GrillGrates is as easy as it comes even if you are cooking a thick cut wagyu ribeye!! Wagyu is rich in beefy flavor and you really don't need to season it much other than a little salt to be honest! This wagyu cowboy cut turned out nearly perfect and the smoke from the oak pellets gave it an incredible red color!!! Plus the Pit Boss 1600 ran like a champ on this cook!! Is this really a debate on Fat Up or Down on a Smoked Brisket using a Pellet Grill Hot and Fast? This was a fun comparison but I would never do it again hot n fast. With the fat up the flat's bark got a little too stiff so for me if you are going to run hot n fast you probably will have better luck with the fat cap down to shield that meat some. I certainly will try this again but I will run the pellet grill at 250° because that fat up was crazy moist and tender, plus it got done a little quicker. So for just plain eating heck ya fat up but don't expect much of a smoke ring for that presentation factor. So if you give this a try let me know how it worked out for you!! Pit Boss 1600 | Brisket | Baby Back Ribs | First Cook In this video I did the first cook on the Pit Boss 1600 aka "Baby Huey" and for the main voyage it did a good job on the brisket and baby back ribs. But this first cook temps were off some on my 1600 but once the temps leveled off it ran like a champ! For most of the cook it did run about 20-25° below the controller setting but I can honestly deal with that compared to large temp spikes!! I have reached out to Pit Boss about this issue on the 1600 and I will certainly share their reply with all of you in a future video! In this video I do a bone in prime rib on a pellet smoker. I used my Pellet Pro Vertical 2300 and this bone in prime rib turned out pretty dang good! Prime is a lot easier than people think but remember there is some big carry over so you want to pull it at least 10 degrees below your preferred doneness temp. So don't be so consumed with fear and give this cook a try! You can do it on any style of smoker or grill! Just run the temps at around 225° and when it gets close to 110-115° pull it and crank up the heat so you can develop a little crust on the outside! Then run it up to 120-125°, let it rest 30 minutes and now you have just become the hero of the day! In this video I do a Maple Bourbon Double Smoked Ham on a pellet grill. I use the Rider DLX for this one and was very happy how it turned out. Plan on 4 to 5 hours for this cook. You are basically just reheating this ham with some extra smoky goodness!! If you are new to outdoor BBQ this is a great cook to learn your new cooker or if you are already a pro well this Maple Bourbon glaze is the bomb!!!! Very super easy recipe but packed with flavor!! Maple Bourbon Glaze: 1 cup light brown sugar 1 cup of REAL maple syrup 2 heaping Tbsp of the rub you are using 1/4 cup of apple juice 1/2 cup of bourbon but you can add more Now mix mix it up and either put it in the cooker if you have a pan that can or cook it up on the stove and reduce it down. I do a smoked bone in prime rib on a pellet grill in this video and trust me this one was epic!! I nicknamed this one Optimus Prime because it was it was wall to wall pink just the way I like it. Now after the carry over it temped out at 132° so it was a perfect medium rare. The Smoke Daddy Pellet Pro 1190 crushed this cook and searing this bone in prime rib with my GrillGun gave me way more control over the finished product!! The Chop Shop and Multi Tool from PS Seasonings was absolutely fantastic and I highly recommend that on ANY beef you are cooking!! So this approximately 10 pound bone in prime rib took 5 hours at 225° but the main thing is that I pulled it at 117 center probe -121 off center probe. I certainly will do this exact same cook Christmas Eve!! I am on the Pellet Pro Vertical Smoker doing the burn off. Sorry for the 3.5 minutes of rough audio but POOP happens! Now I did run into a problem with the fan getting wedged from shipping but it was a very easy fix. I just took a screw driver and gave the bearing a little whack and the fan started to spin.
