Crispy Chickpea Salad - Vegan Meal - Easy Vegan Dinner Recipes
👉👉👉you will need:
- 1 x 400g can of chickpeas
- 3 tsp olive oil
- 1 tbsp nutritional yeast
- a pinch of salt
- a pinch of pepper
- 2 tbsp coconut yoghurt
- juice of 1/4 of a lemon
- 1/2 tsp turmeric powder
- 1/2 tsp garlic powder
- 8 cherry tomatoes
- 1/2 head cos lettuce
- 1/4 cucumber
- snow pea sprouts (to serve)
👉👉👉to create:
1. drain and rinse the chickpeas, before placing them into a bowl with 1 tsp olive oil, nutritional yeast and a pinch of salt + pepper. toss lightly, before placing on a baking tray and baking in the oven for 10-15 minutes.
2. in a jar, shake together coconut yoghurt, lemon juice, turmeric powder, garlic powder and a pinch of salt + pepper until smooth, then set to the side.
3. chop the cherry tomatoes, cos lettuce and cucumber into desired-sized pieces.
4. place the cos lettuce and cucumber in a bowl with the coconut yoghurt dressing. toss together well.
5. top with cherry tomatoes, crispy chickpeas and snow pea sprouts and enjoy!

- 1 ripe avocado
- juice of 1 lemon
- 1 tsp fresh dill
- 1 tsp fresh coriander
- 1/2 spring onion
- pinch of salt
- pinch of pepper
- 2 pieces of sourdough bread
👉👉👉to create:
1. slice open the avocado, scooping out the inside and placing it into a bowl. add the juice of 1 lemon, as well as dill, coriander, and spring onion which have been chopped finely.
2. add salt and pepper, and mash well with a fork until smooth.
3. toast sourdough well, before topping it with the avocado smash.
4. top with more fresh herbs, lemon, or sesame seeds if desired, and enjoy!

you will need:
👉👉👉for the lentils:
- 1 tsp olive oil
- 1 spring onion
- 3 cloves of garlic
- 1 x 420g can brown lentils
- 1/2 cup coconut cream
- 1 tsp curry powder
- 1/4 tsp cumin
- pinch of salt
👉👉👉for the yellow rice:
- 2/3 cup white rice
- 2/3 cup water
- 1/2 tsp turmeric
- 1/2 tsp garlic powder
method:
👉👉👉for the lentils:
1. chop garlic and spring onion finely, then add to a medium-sized pot with olive oil over medium heat on the stove
2. whilst garlic and spring onion brown, drain the can of brown lentils and rinse well
3. add lentils, coconut cream, italian tomatoes, curry powder, cumin and salt to the medium-sized pot and mix well with the garlic and spring onion. allow to heat, continually stirring, for 10-15 minutes
4. remove from the heat, and serve hot with rice and coconut yoghurt

1. pour rice, water, turmeric and garlic powder into a rice cooker and cook until nice and fluffy. serve hot!

👉👉👉you will need:
- 3 spring onions
- 3 cloves of garlic
- 1/2 tbsp olive oil
- 1 carrot
- 1 bunch of broccolini
- 1 yellow capsicum
- 1 small bunch of pak choy
- 10 green beans
- 180g udon noodles
- 1/2 cup crunchy peanut butter
- 1 tsp soy sauce
- 1 tsp maple syrup
- the juice of 1/2 a lemon
- a pinch of salt
- 1/4 cup hot water
👉👉👉method:
1. finely chop spring onions and garlic, before placing them into a large frying pan over medium-high heat with the olive oil. stir lightly and cook until golden.
2. chop carrot and broccolini into small-medium pieces, before adding them to the large frying pan and allowing to cook for 10-15 minutes, stirring occasionally.
3. in a medium-sized bowl, mix peanut butter, soy sauce, maple syrup, lemon juice, salt and hot water until smooth, adding more water if needed. then, chop the capsicum, green beans and pak choy into small-medium pieces and add them to the frying pan, cooking for a further 7-10 minutes.
4. whilst the vegetables are frying, cook your udon noodles as per packet instructions, before draining and rinsing lightly.
5. add noodles and peanut sauce to the frying pan, tossing lightly until noodles and vegetables are coating in peanut sauce. remove from the heat.
6. serve hot, top with sesame seeds or fresh herbs if desired, and enjoy!
