I spelled Zucchini Wrong in this vid. lol... Today I'm making my Zucchini bread!! Yum Yum! Grab all of your overgrown green squash and let's get to baking. This recipe is great for 2 loaves or 24 big muffins! It freezes wonderfully and if you make it I know you'll be pleased.

HH Zucchini Bread
3 Cups Flour
1 tsp Salt
1 tsp Baking Soda
1 tsp Baking Powder
1 TBSP Cinnamon
(Optional: Add a pinch of clove and nutmeg)
3 Eggs
1 Stick of Salted Butter (Or 1/2 Cup Vegetable or Coconut Oil)
2 Cups of Sugar
1 TBSP Vanilla (The real stuff...not imitation)
2-4 Cups of Shredded Zucchini
1/2 Cup of Sour Cream, Cream Cheese, Ricotta, or Applesauce

1. Mix together your flour, salt, baking soda, baking powder, and spices. Set Aside.
2. In your mixer, add in 3 eggs, butter, sugar, vanilla, and your sour cream (or other). Mix Well.
3. Add in your dry ingredients to your wet ingredients until mixed together.
4. Fold in Zucchini.
5. Transfer to prepared loaf pans or muffin tins.
6. Bake at 350 degrees for 1 hour. Check after 45 mins. In the summer it takes less time for these babies to bake!
