Cheesy Quick Oats Crackers

Quick mix, no yeast, 20 mins baking time!

TIP!!
For a dryer version on this recipe – You can keep the crackers in the oven at 300 degrees for another 15 – 20 mins.

INGREDIENTS

2/3 cup of water and 1 cup milk (OR 1 & 2/3 cup of water)
4 cups of Quaker whole quick oats (ground them slightly, leave chunky bits)
1 cup of grated cheese (Extra old Cheddar, Gruyere, Provolone)
150 grams of unsalted butter (1/2 a stick of butter)
1 & 1/3 teaspoon of baking powder (Optional)
1 table spoon of Kaymak (Optional)
1 egg (Optional)
Salt to taste (1 teaspoon)

ALTERNATE INGREDIENTS
Whole wheat flour, corn flour or regular white enriched flour can be used. Water, buttermilk, or whole milk or both can be used for the liquid portion of the ingredients. Salted butter or oil can be used instead of unsalted grass-fed butter. For the Kaymak, cream cheese or sour cream is a good substitute. Add an egg is optional, the recipe works out just as well without eggs. Any type of cheese works.

INSTRUCTIONS
Dry Mix
Using an electric grinder, slightly grind 2 cups of whole oats. Do no grind them too much, leave lots of chunky bits. Add the pinch of salt to taste. Add the grated cheese to the dry ingredients mix.
Wet Mix
Whisk the egg, melted butter, Kaymak, milk (water), and baking soda together.

Add the wet mix into the dry mix using a spoon or spatula mix well. The mix will be very wet, leave to sit for a one hour before rolling the dough out flat. You can refrigerate or leave the dough out on the counter. You can use parchment paper to roll out the dough. Place the dough between a large sheet of parchment paper, fold in two and roll out to the size of your available baking sheet or pan. Bake the dough between the parchment paper. OVEN INSTRUCTIONS
Pre-heat at 350 for 30 mins – Bake at 350 degrees for 15 mins.
