Working on getting your cholesterol levels to a healthy number? Today we have tips and tricks and recipes for you and for anyone trying to live a healthy lifestyle. It is amazing how much difference a few changes can make. Probably the fewer changes you make at one time, the better. Focus on calming yourself down when you feel stressed and on eating well. ●RECIPES
//Zoodle/Chickpea/Avocado Salad//
3 medium zucchini to make zoodles
3 roma tomatoes (I used sliced grape tomatoes)
Chopped onion
2 cans garbanzo beans (aka chickpeas)
1-1/2 T. chopped fresh spearmint leaves
1-1/2 T. olive oil
1 T. fresh lemon juice (bottled should work but might not taste quite as good)
¾ tsp. cumin
½ tsp. salt
¾ tsp. pepper
1 ripe avocado, pitted and diced
1 cup crumbled feta cheese

//Cucumber, Yogurt and Dill Dip//
2 cups plain yogurt
1 seedless cucumber, unpeeled, halved lengthwise, seeded, grated
1 tablespoon salt
1/2 cup sour cream
2 tablespoons fresh lemon juice
2 tablespoons minced fresh dill
1 garlic clove, minced

//Cucumber, Yogurt and Dill Dip//
2 cups plain yogurt
1 seedless cucumber, unpeeled, halved lengthwise, seeded, grated
1 tablespoon salt
1/2 cup sour cream
2 tablespoons fresh lemon juice
2 tablespoons minced fresh dill
1 garlic clove, minced
1 T. whey (optional, but will make it last longer)

Strain yogurt in refrigerator for several hours or overnight, covered. Or, use Greek yogurt. Mix cucumber and 1 tablespoon salt in small bowl; cover and chill 3 hours.

Place strained yogurt in another bowl. Mix in sour cream, lemon juice, dill and garlic. Squeeze out as much excess liquid as possible from cucumber. Stir cucumber into yogurt. Season with pepper. Cover; chill at least 2 hours. (Can be made 1 day ahead. Keep refrigerated.) NOTE: If you add 1 T. whey and let sit on counter for 6-10 hours before placing in fridge, it will last a lot longer.

// Quinoa Tabbouleh Salad//
1 cup dry quinoa (cooked quinoa will triple in size) – cook according to directions
1 cup diced cucumber
1 cup sliced grape tomatoes
½ cup crumbled feta cheese
1 T. chopped spearmint leaves
2 T. chopped olives of choice
1 T. olive oil
1 T. lemon juice

// Baja Bowl//
Heated ingredients:
Rice (2 cups, dry) – Cook according to directions
Quinoa (1 cup, dry) – Cook according to directions
1 bottle black bean and corn salsa (optional)
1 can black beans, drained
1 can corn, drained
1 bottle salsa verde (the green salsa)

Cold ingredients:
1 cup (8-ounce container) grape tomatoes, sliced
Feta crumbles
1 avocado, diced
Cilantro
Yogurt (dollop on each bowl)

Cilantro lime dressing:
3 tablespoons freshly squeezed lime juice
1 1/2 tablespoons honey
1/4 cup fresh cilantro
2 garlic cloves, minced or pressed
¼ teaspoon salt
¼ teaspoon pepper
Pinch crushed red pepper flakes
1/3 cup extra virgin olive oil
1 Tablespoon whey

Blend cilantro lime dressing together in blender or NutriBullet. Immersion blender may also work. Let sit on counter 6-10 hours for whey to work. Then refrigerate. With the whey added, the dressing will last a lot longer.

Place hot ingredients in bottom of bowl. Top with cold ingredients and dressing.
