Peach Cherry Blueberry Gluten Free Muffins

INGREDIENTS
½ of box of gluten free cake mix
1 egg
1 teaspoon ground cinnamon (optional)
2 teaspoons vanilla
½ cup cherry filling
½ cup can peaches
½ cup dried blueberries
1/3 cup of oil

INSTRUCTIONS
In a mixing bowl, whisk egg with vanilla and oil. Add ½ of the cake mix from the box, add the cherries, peaches and blueberry to the mix. Mix the ingredients well with a fork. Pour the mix into the cup cake cups and bake for 20 – 25 minutes. Use a tooth pick to poke the middle to test if the muffins are fully baked. A clean tooth pick after poking means the muffins are done!

ALTERNATE INGREDIENTS
Use any gluten free cake mix. Cinnamon or nutmeg can be added if desired. Any fruit mix can be substituted, use what’s in season or what’s available. Butter or vegan spread can be used as a substitute for oil.

BAKING INSTRUCTIONS
Pre-heat at 350 for 30 mins
Bake at 350 degrees for 20-25 minutes or bake until golden brown.
