White Chocolate Cherry Gluten Free Muffins

INGREDIENTS

½ of box of Gluten free cake mix
1 Egg
1 teaspoon ground Cinnamon (optional)
1 teaspoons Vanilla
½ cup Cherry Filling
½ cup White Chocolate
1/3 cup of Oil

ALTERNATE INGREDIENTS

Use any gluten free cake mix, no particular brand makes a difference. Cinnamon or nutmeg can be added if desired. You can use dark chocolate if that’s your preference. Butter or vegan spread can be used as a substitute for oil.

INSTRUCTIONS

In a mixing bowl, whisk egg with vanilla, cinnamon and oil. Add ½ of the cake mix from the box, add the cherries, and white chocolate to the mix. Mix the ingredients well with a fork. Pour the mix into the cup cake cup and bake for 20 – 25 minutes. Use a tooth pick to poke the middle to test if the muffins are fully baked. A clean tooth pick after poking means the muffins are done!

BAKING INSTRUCTIONS

Pre-heat at for 30 mins
Bake at 350 degrees for 20-25 minutes or bake until golden brown.
