Since we are following a ketogenic diet, I’m sharing my version of the most popular Thanksgiving side dish, Mashed Cauliflower keto style. In this video, I show you how to make mashed cauliflower, how to make keto gravy, and how to make my favorite, keto loaded cauliflower.

Cauliflower is often referred to as faux-tatoes because it replaces and tastes like a potato in many keto side dish recipes. Even if you aren’t a cauliflower fan, you will love cauliflower as a keto potato replacement in this mashed cauliflower recipe. You can’t even tell it’s made of cauliflower and your guests will love it!

Besides showing you how to make keto mashed cauliflower, I show you how to take this keto mashed potato substitute and turn it into a loaded cauliflower casserole. This loaded cauliflower mash combines cheese, bacon, and green onion to the keto mashed cauliflower. Loaded cauliflower keto style is a perfect alternative if you find mashed cauliflower boring. Making loaded cauliflower is also a great way to use up leftover keto mashed cauliflower. KETO MASHED CAULIFLOWER
(Serves 4)

3 tablespoons butter
2 garlic cloves, minced
1 head of cauliflower, chopped into florets
1 cup turkey stock or chicken broth
2 oz cream cheese
¼ cup parmesan cheese
½ teaspoon salt
⅛ teaspoon black pepper
Melt butter in a skillet over medium heat. Add garlic and saute until fragrant. Pour in cauliflower and broth. Simmer until cauliflower is tender.
Drain fluid. Squeeze out excess fluid from the cauliflower by placing it between two paper towels. Get as much fluid out as possible for thick mashed cauliflower.
In a food process, combine the cooked cauliflower, cream cheese, parmesan cheese, salt and pepper. Puree until smooth.

KETO TURKEY GRAVY

2 cups turkey stock or chicken broth
**Excess drippings from the turkey if you have
1 ½ tablespoons gelatin
2 egg yolks
3 tablespoons butter
½ teaspoon xantham gum or 1 teaspoon arrowroot powder (more if you like thick gravy)

Combine turkey stock and gelatin in a saucepan. Simmer over medium high heat for 8-10 minutes.
Remove from heat and whisk in egg yolks, stirring vigorously. Put back on low heat and melt in butter.
Add xantham gum or arrowroot powder. Bring to simmer. It will thicken as it cooks. Once it’s thickened a little, remove from the heat. Gravy will thicken as it cools too.

LOADED CAULIFLOWER MASH

Prepared Mashed Cauliflower (see above & double the recipe)
1 ½ cups shredded cheddar cheese
6 slices bacon, crumbled
¼ cup chopped green onions
¼ cup parmesan cheese
2 tablespoons ground pork rinds

Combine mashed cauliflower, cheddar cheese, bacon and onions. Scoop into a casserole dish. Top with mixture of parmesan cheese and ground pork rinds.
Bake for 20 minutes at 400 degrees.
