THE CREAMIEST, KETO EGGNOG RECIPE IS RIGHT HERE!
Since it’s Christmas time, you may be in search of the best keto eggnog recipe. And I have it for you! This is an easy keto eggnog recipe too because it takes only four ingredients and can be made in less than 10 minutes. In this video, I show you how to make cooked eggnog. This is also a sugar free eggnog recipe. I use Confectioner’s Swerve but you can use an sugar alternative to sweeten your nog.

This is also a cooked eggnog recipe. Not that you have to worry about Salmonella as long as you get fresh eggs and you have a clean break when you crack open the shells. But to help you rest easy, this is a cooked eggnog and you can omit the egg whites if you want to.

This makes the best keto Christmas cocktail if you add a little rum to it. wink wink

KETO EGGNOG RECIPE

4 cups macadamia nut milk or nut milk of choice
½ cup confectioner’s Swerve or sugar substitute of choice
5 eggs, separated
1 cup heavy cream
Nutmeg for topping
1 ½ cups rum (optional)

In a saucepan, heat 2 cups of nut milk until warm.
In a mixing bowl, slowly add the confectioner’s Swerve to the egg yolks. Whisk until thick and pale yellow.
Whisk 1 cup of the warmed nut milk into the yolk mixture. Then add back into the remaining nut milk in the saucepan. Stir until combined. Continue cooking over low heat until the mixture has thickened and reach about 165 degrees. Don’t boil or overcook or else your eggs will curdle.
Turn off the heat and whisk in the heavy cream. Immediately place saucepan into an ice bath to cool.
In a separate bowl, beat the egg whites until soft peaks form. Set aside.
In a pitcher or punch bowl, pour in eggnog mixture, remaining 2 cups nut milk and top with egg white mixture. Stir in rum at this point too if using. Stir all ingredients until eggnog is frothy and thick.
