The “Blue Cheese Crusted Pork Chop” Pizza is a whole lotta pizza, bold flavours from the blue cheese and pork, and a touch of the holidays finds a way into your heart with the breading from the pork reminiscent of stuffing from a family get together.

Pork and cabbage, a combination that never lets down. And what is it about cabbage and onions sauteed together, practically a meal on its own. But Pears decided to show up for the family get together to, and they were as pleasant as usual, not like last time when they got too far deep into the cooking wine.

BLUE CHEESE CRUSTED PORK CHOP PIZZA
Ingredients
TOPPINGS
2 cups BLUE CHEESE CRUSTED PORK CHOPS (instructions below)
2 cups MOZZARELLA CHEESE
1 cup CABBAGE AND ONIONS (instructions below)
1 PEAR (sauteed)
1 cup TOMATO SAUCE

Blue Cheese Crusted Pork Chops
2 PORK CHOPS
1/2 cup BLUE CHEESE
1 cup BREADCRUMBS
1 tbsp PARSLEY
1/4 tsp SALT
1/8 tsp PEPPER
1 tbsp OIL

Cabbage and Onion
1 cup CABBAGE
2 tbsp ONION
1 tbsp OIL
1 tbsp APPLE CIDER VINEGAR
1 tbsp SUGAR
1/4 tsp SALT
1/8 tsp PEPPER

DOUGH
2 cups SOURDOUGH STARTER (active)
1 cup BREAD FLOUR
1 tsp SALT

Instructions
WILD PIZZA DOUGH (1 hour)
1). Make your dough by mixing the sourdough starter, bread flour (adding a bit of flour at a time until it takes shape but is still a little sticky) and salt together. Knead the dough for 30 seconds, flour lightly as needed.
2). Place the wild dough in a lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough).

TOPPINGS
1). Shred cabbage and dice onion. Add oil to a large frying pan on medium high heat and saute cabbage and onions for 2-3 minutes, stirring frequently.
2). Add apple cider vinegar, sugar, salt and pepper, mix well. Add white wine and turn to low heat for 2-3 minutes. Remove from pan.
3). Slice pear into 1/4" thick pieces. Add oil to a large frying pan on medium heat and saute pears 2-3 minutes each side or until done, stirring frequently.
4). Preheat oven to 400 degrees F.
5). Oil, salt and pepper 2 pork chops. In a large bowl mix together blue cheese, breadcrumbs, parsley, salt and pepper. Add oil and mix well. Add the breadcrumb mixture to the tops of the pork chops and pat down.
6). Add oil to large oven safe frying pan and heat to medium high heat on the stove top, and cook pork chops (breadcrumb mixture side up) for 2-3 minutes.
7). Then put the frying pan with the pork chops into the oven for 6-8 minutes. Remove the pork chops and let cool. Chop pork chops into bite sized pieces.

PIZZA
1). Preheat oven to 550 degrees with baking steel or pizza stone inside the oven for 1 hour.
2). Make your dough by mixing the sourdough starter, flour and salt together (adding a bit of flour at a time until it takes shape but is still a little sticky) and knead the dough for about 30 seconds.
3). Place the dough in lightly floured bowl and cover with a towel, set aside for 1 hour.
4). Flour surface and roll out the dough. Put a floured pizza peel under the dough.
5). Grate mozzarella cheese.
6). Add sauce, cheese, and toppings. Pat down the toppings before putting into the oven.
7). Bake pizza in the oven at 550 degrees for 8-10 minutes.
8). Remove pizza from oven and let cool for 5 minutes.
