Ingredients:
• 1 packet of cannelloni pasta (200g)
• 100ml of tomato extract
• 4 chopped tomatoes
• 1 medium chopped onion
• 4 minced garlic cloves
• Olive oil to taste
• 1/2 tablespoon of butter
• 1 bunch of chopped spinach
• 200g of ricotta
• 2 table cream (200g each)
• 1 cup grated cheese of your choice
• Salt and pepper to taste
• Nutmeg
• 1 pinch of red pepper flakes
Method:
Chop spinach, onion and garlic. Fry the onion and garlic in the oil with the butter, add the chopped spinach, salt, black pepper and pepperoni and sauté. Let cool a little.
In a bowl add the crumbled ricotta, the milk cream and the sautéed mix and set aside.
Cut the tomatoes, place in a bowl. Add the tomato paste, the cream and a pinch of salt. Mix well and place in an oven-safe dish.
Inside each cannelloni dough, with a teaspoon of the reserved stuffing and arrange them over the tomato sauce, sprinkle grated cheese.
Cover with aluminum foil to cook, in oven 180ºC for 30 minutes. Is ready!
*If you want more sauce, just add half a cup of water or milk along with the tomatoes, but don't forget that the tomatoes release water.
