Easy to make Mediterranean Shrimp And Polenta with Chorizo

A Mediterranean spin on the Southern American classic shrimp and grits. This flavorful dish uses the Italian style grits called Polenta, Argentinean red shrimp which is both hearty and delicious, and Spanish chorizo to round out the flavor. Shrimp and Polenta marry both our Italian and Spanish heritages it's one of our family's favorite dishes that we can't get enough of.
And for a quick dinner during the week, you can use instant polenta and have this dish made in under 30 min.

I'll also show you how to make shrimp stock for this recipe.

Polenta on its own is a perfect side-dish. Spanish chorizo and the cooked shrimp on its own is a perfect tapas kind of appetizer, no need to cook the chorizo.
