Your poops are gunna love it ✨

Here’s the thing, fermented foods are great for you but the stuff in the grocery store is insanely expensive! Don’t waste your money on cabbage and salt! It’s a little bit more work than grabbing a jar off the shelf but you’ll impress yourself and others by making it at home ✨

🌞Here’s what you need:
• a green cabbage
• a large bowl
• salt
• a mason jar
• willingness to get your hands into the mixture 🙌🏻

🌞Here’s how:
• slice your cabbage ‘some what’ thinly, depending how much crunch you like you can go up to 1cm thick! But you can also use a mandolin to get it real thin which will result in less crunch! - save 1 of the outer leaves so you don’t have to use plastic wrap like me! ( oops I forgot 🤷🏻‍♀️ lol )

• add your sliced cabbage to a large squeaky CLEAN bowl

• cover your cabbage with 1 1/2 - 2 tsp of salt per pound of cabbage, depending how salty you like your sauerkraut. ( you can look at your grocery store receipt for the weight of your cabbage! )

• use your hands to massage your cabbage until some liquid has collected at the bottom of the bowl. ( this may take 5-10 minutes soooo put a YouTube video on! ) Cover with a clean cloth and let the mixture sit for 20-30 minutes.

• repeat the massaging process again until you can pick up a handful of cabbage and ‘wring out the liquid’ from it.

• stuff the mixture into an appropriate sized mason jar, stopping to pack it down tightly. I use a blender tamp to really pack it down. Once all the mixture is packed in, cover it with a cabbage leaf ( if there is more than 2” of room from the top of the jar. If there is less than 2” of room, skip this step! ) Seal the jar with it’s clean lid and set on the counter, preferably somewhere the sun doesn’t hit. The fermentation process can take anywhere from 2 to 6 days.

*BURP YOUR JAR!!* if you touch the lid and you feel it’s tightness, then simply unscrew the jar a touch to release the pressure, you’ll hear the gasses releasing. ** if you do this and a bunch of liquid flows out, you’re allllll good, put that thing in the fridge lol! It’s fine if yours never does this, but you’ll be able to notice little air pockets!
