Ingredients:

For the crust and topping:

1 and 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/4 teaspoon salt
1/2 cup unsalted butter, softened.
For the filling:
2 cups fresh or frozen cherries, pitted
1/2 cup granulated sugar
2 tablespoons cornstarch
1/2 teaspoon almond extract
1/4 teaspoon salt.

Directions:

1.Preheat your oven to 375°F (190°C). Grease an 8x8 inch baking pan.

2. In a large mixing bowl, whisk together the flour, sugar, and salt.

3. Cut in the softened butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.

4. Reserve 1/2 cup of the crumb mixture for the topping.

5. Press the remaining mixture into the bottom of the prepared pan, using your hands or the bottom of a measuring cup to pack it down tightly.

6. Bake for 10 minutes.

7. While the crust is baking, prepare the cherry filling. In a medium mixing bowl, mix together the cherries, sugar, cornstarch, almond extract, and salt until well combined.

8.Once the crust is done baking, remove it from the oven and pour the cherry mixture over the top.

9.Sprinkle the reserved crumb mixture over the cherry filling.

10. Bake for an additional 35-40 minutes, or until the topping is golden brown and the filling is bubbly.

11. Allow the cherry pie bars to cool in the pan for at least 20 minutes before slicing and serving.
