Potato Roll Samosa is a delicious Indian snack that is made by stuffing spiced potatoes in a crispy and flaky pastry shell. This recipe makes around 10-12 samosas, depending on the size of your pastry sheets.

Here are the ingredients you'll need:

For the filling:

4 medium-sized potatoes, boiled and mashed
1/2 cup green peas
1 small onion, finely chopped
1-2 green chilies, finely chopped
1/2 teaspoon cumin seeds
1/2 teaspoon coriander powder
1/2 teaspoon garam masala
1/2 teaspoon amchur (dry mango powder)
Salt to taste
1 tablespoon oil
For the pastry:

10-12 sheets of filo pastry
2 tablespoons all-purpose flour
1/4 cup vegetable oil
Instructions:

Heat oil in a pan and add cumin seeds. Once they start to sizzle, add onions and green chilies. Fry until the onions turn translucent.

Add green peas and cook for a few minutes until they are tender.

Add the mashed potatoes, coriander powder, garam masala, amchur, and salt. Mix well and cook for 5-7 minutes.

Let the filling cool down to room temperature.

Preheat the oven to 375°F (190°C).

Take one filo pastry sheet and brush it with oil. Sprinkle a little flour on top and place another sheet on top of it. Repeat this process with 3-4 sheets.

Cut the stacked sheets into 3-inch wide strips.

Place 1 tablespoon of the potato filling at one end of each strip.

Roll the pastry tightly around the filling, brushing the edges with oil to seal.

Place the samosas on a baking tray lined with parchment paper.

Brush the samosas with oil and bake them for 15-20 minutes, or until they turn golden brown.

Serve hot with your favorite chutney or sauce.
