How to make a Sourdough Starter - even when things don't go as planned

Let's make a sourdough starter! Sharing how I made us a new sourdough starter and made do when life got a little chaotic and plans went a little awry.

Day 1 - 30 g flour and 30 g water and tiny bit of raw honey
Day 2 - Added 30g of flour & 30g water and tiny bit of raw honey
Day 3 - Stir only
Day 4 - Discard ½, and add 30 g of flour and 30 g water (You can save discard in a jar in
the fridge to use for crackers or another sourdough discard recipe)
Day 5 - Discard ½, and add 30 g of flour and 30 g water
Day 6 - Discard ½, and add 30 g of flour and 30 g water
Day 7 - Discard ½, and add 30 g of flour and 30 g water
Day 8 - accidentally skipped!
Day 9 - Discard ½, and add 30 g of flour and 30 g water
Day 10 - Discard ½, and add 30 g of flour and 30 g water, & put it in to a warmer area
upstairs
Day 11 - No discard, added 15 g flour & 15 g water
Day 12 - Put starter in fridge
