To make vanilla extract, you'll need:
1 cup of vodka or other high-proof alcohol
3-4 vanilla beans
To start, cut the vanilla beans lengthwise to expose the seeds inside. Place the beans in a clean jar or bottle, and pour the vodka over them. Make sure the beans are fully covered by the liquid. Give the bottle a good shake, and store it in a cool, dark place for at least 4-6 weeks. The longer you let it sit, the stronger the flavor will be. To make almond extract, you'll need:
1 cup of vodka or other high-proof alcohol
1 cup of raw almonds, chopped or sliced

To make coconut extract, you'll need:
1 cup of vodka or other high-proof alcohol
1 cup of unsweetened shredded coconut
Place the shredded coconut in a clean jar or bottle. Pour the vodka over the coconut, making sure it's fully covered by the liquid. Give the bottle a good shake, and store it in a cool, dark place for at least 2-3 weeks. Shake the bottle occasionally during this time to help distribute the flavor.
