This meal is delicious and easy to make especially if you have some leftover cooked chicken food Pot pie. You can make a few small dishes and freeze them for for later quick lunch or dinner !
Ingredients
1 cup onion
1 cups carrots
1 cup celery
1 cup mushroom
1 1/2 cups potatoes
3 Tbsp all-purpose flour
1 teaspoons salt or to taste
1/2 teaspoon pepper or to taste
1 teaspoon dried thyme
1/4 tsp turmeric
3 cups chicken broth
1/4 cup frozen peas
1/4 cup frozen corn
2 cups cubed cooked chicken
Puff pastry
2 Tbsp butter
2 Tbsp olive oil

Steps:

Preheat oven to 425°.
In a large skillet, heat butter and olive oil over medium-high heat.
Add onion; cook and stir until tender.
Stir in celery, carrot, mushroom and potato and cook for a few minutes.
Add seasonings until blended then add flour and cook for a few seconds.
Gradually stir in broth, bring to a boil, stirring constantly; cook and stir 2 minutes or until thickened.
Stir in peas, corn and chicken, cover and cook for a minute or until the potato and is cooked.
Set aside to cool a bit.
Unroll puff pastry crust with the help of little flour, cut into individual serving baking dishes size. Or make one big dish.
Add chicken mixture in the dishes then place the crust over the filling. Trim and seal and the edges . Cut slits in tops.
Bake 35-40 minutes or until crust is lightly browned. Let stand 15 minutes before cutting. Enjoy !
