Here is a simple high protein chicken omelette recipe:

Ingredients:
- 2-3 eggs
- 1/2 cup cooked shredded chicken breast
- 1/4 cup chopped onion
- 1/4 cup chopped red bell pepper
- 1/4 cup shredded cheddar cheese
- Salt and black pepper, to taste
- 1 tablespoon olive oil

Instructions:
1. In a small bowl, whisk together eggs with salt and black pepper.
2. Heat olive oil in a non-stick skillet over medium heat.
3. Add onion and red bell pepper, and sauté until tender and fragrant, about 2-3 minutes.
4. Add shredded chicken to the skillet and cook for another 2-3 minutes until heated through.
5. Pour whisked eggs over the chicken and vegetables.
6. Use a spatula to gently lift the edges of the omelette, allowing the uncooked eggs to flow underneath.
7. When the top of the omelette is almost set, sprinkle shredded cheese over one half of the omelette.
8. Use the spatula to fold the other half of the omelette over the cheese.
