INGREDIENTS
Fries:
Potato: 500g
Salt: 1 Tablespoon
Corn Starch / Corn Flour: 20 grams
Eggs: 02
Bread Crumbs: 100 grams

Cheese Sauce:
Unsalted Butter: 20 grams
Corn Starch: 1 Tablespoon
Milk: 100 ml
Red Chili Powder: 1/2 Teaspoon
Chilli Garlic Sauce / Ketchup: As per taste
Cheddar Cheese: 50 grams / 3 slices

PREPARATION: French Fries Recipe
1) Start off by cutting potato sticks lengthwise about half an inch each and wash them thoroughly to remove starch and soak them for about 30 minutes
2) Strain out and let them dry completely or pat dry with a kitchen paper towel.
3) Add water in a pan with 1 tablespoon salt, add potato sticks, and boil for about 5 minutes
4) Strain out again and add to ice-cold water and let it sit for 20 minutes and then take out in a separate bowl, Add 20 grams of cornstarch/cornflour and mix well.
5) Crack 2 eggs In a mixing bowl & whisk the egg yolks to break them up. Dip potato sticks in eggs one by one and then add in a bowl of Breadcrumbs - Make sure to cover evenly.
6) Heat oil in a deep-fryer or large saucepan to 275-300F (135-150C)
7) Gently add the potatoes to the oil, in batches, and fry for about 3-5
minutes, until soft, but not golden, stirring and flipping the potatoes occasionally. Fry until golden brown and crisp

CHEESE SAUCE:
1) Add oil to a frying pan with 20 grams of unsalted butter and stir on a low heat
2) Add 1 tablespoon of cornstarch/cornflour and mix well
3) Add red chili powder according to your liking and taste
4) Add 100ml milk and gently stir until everything is completely mixed, Add 50 grams of Cheddar cheese slices and cook until it starts bubbling and the sauce becomes thick.
5) You can add Chilli Garlic Sauce or Ketchup according to your taste.

DISH OUT & ENJOY

IMPORTANT NOTES:
- White waxy potatoes are not good for Frech Fries. Always use Russet potatoes because they tend to be larger and more oblong in shape.
- Russets also have tougher skin. While edible, the skin on russets is most commonly kept for rustic potato dishes, such as skin-on french fries.
