Chicken bacon ranch
1 lb new baby potatoes, (halved or quartered so they're in 1" pieces)
2 tablespoons dry ranch seasoning mix
4 (4-ounce) boneless skinless chicken breasts, pounded to 1/2" thick
1/2 cup prepared ranch dressing (plus extra for serving)
1 cup cheese, grated (cheddar or mozzarella)
4 slices bacon, cooked and crumbled
1/4 cup green onions, sliced
Preheat oven, grill, or campfire to 400 degrees F
In a medium-sized bowl or plastic bag, add the chicken and potatoes then sprinkle with ranch seasoning and shake (or stir) until coated.
For each packet, place a double layer of aluminum foil on a work surface and coat with nonstick spray.
In each packet place 1 chicken breast, ⅛ cup ranch dressing, and surround with ¼ of the baby potatoes.
Secure foil packet and bake for 30 minutes, or until chicken and potatoes are tender.
Carefully unwrap the foil and sprinkle with cheese. then the cooked bacon close packet and bake for 3 to 5 more minutes until chees is melted.
Garnish with green onion and season to taste with salt and pepper, or more ranch seasoning.
Apple crisp
â–¢4 c. apples peeled, sliced thinly
â–¢1/4 c. sugar
â–¢2 tsp cinnamon
â–¢1/2 c. butter melted
â–¢1/2 c. brown sugar packed
â–¢1/2 c. flour
â–¢1/2 c. quick oats
â–¢1/2 tsp baking powder
â–¢Aluminum Foil
Build campfire, or preheat grill/oven to 350 degrees.
Tear off 4 sheets of aluminum foil about 8'' x 12''.
Evenly divide apples between the four pieces of tinfoil.
In a small bowl mix together sugar and cinnamon. Evenly sprinkle over the top of the apples.
In a medium sized mixing bowl mix together butter, brown sugar, flour, oatmeal and baking powder. Evenly sprinkle of the top of the apple mixture.
Foil foil packets up and seal. Place on a grate over campfire, or in the oven or on the grill grate. Bake for about 20 minutes.
Carefully open foil packets, top with ice cream if desire and enjoy!
