How to make KULFI

Kulfi is a delicious Indian frozen dessert that is often flavored with cardamom, saffron, and nuts. It has a rich and creamy texture and is typically made with condensed milk and evaporated milk. Here's a basic recipe for making kulfi:

Ingredients:

2 cups full-fat milk
1 cup condensed milk
1 cup evaporated milk
1/4 cup sugar (adjust according to your taste)
1/2 teaspoon cardamom powder
A pinch of saffron strands (optional)
A handful of chopped nuts (such as pistachios, almonds, or cashews)
Instructions:

Pour the full-fat milk into a heavy-bottomed saucepan and bring it to a boil over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pan.

Once the milk comes to a boil, reduce the heat to low and simmer it until it reduces to about half its original volume. This process can take around 30 to 40 minutes. Stir occasionally to avoid scorching.

Add the condensed milk, evaporated milk, and sugar to the reduced milk. Mix well until everything is combined.

Continue cooking the mixture over low heat for another 10 minutes, stirring continuously.

Add the cardamom powder and saffron strands (if using) to the mixture. Stir well to distribute the flavors evenly.

Remove the pan from the heat and let the mixture cool down to room temperature.

Once cooled, pour the mixture into popsicle molds or small disposable cups.

Sprinkle the chopped nuts over the top of each mold or cup, pressing them gently so they stick to the mixture.

Cover the molds or cups with aluminum foil and insert a popsicle stick into each one, if using cups.

Place the molds or cups in the freezer and let the kulfi set for at least 6 hours or overnight.

To serve, remove the kulfi from the molds by running them briefly under warm water or gently loosening the sides of the cups with a butter knife.
