Smoked Amberjack Fish Dip - Ghetto Rigged Smoker

In the last video I posted you saw us catch an Amberjack off Tavernier. Right off my house in Key Largo, Florida. We caught the Amberjack trolling dive plugs right off the reefs edge in 20-40ft of water. Let's make some smoked amberjack fish dip!

First I filleted the Amberjack into 2 big fillets. I then cut those pieces into more manageable chunks with a total of 6 pieces in the end. I removed all the muscle (red meat) and the put the pieces into a brine to prepare them for smoking. Time to show how to make fish dip.

I don't have a real smoker right now so ghetto rigged the grill a little bit to function as a smoker. For smoking chips I soaked apple wood chips for an hour and then wrapped them up into 3 separate foil packets. I will place these foil packets on top of one of the gas burners inside the grill. Sorry I know! This is def. a ghetto rigged smoker lol

Make sure to set the burner to the lowest setting possible. Once the wood inside the foil packets catches fire and begins to smoke I will usually turn the burner off and turn it back on later if needed.

After a couple hours on the grill the fish pieces were cooked through and ready to be turned into fish dip. For this recipe I used mayo, cream cheese, sour cream, red pepper, lemon, chopped green onion, chopped sweet onion, basil and hot sauce.
