White chocolate 1 cup Confectioner’s sugar 2 Large eggs 2 Large egg yolks 1 tbsp Red liquid food coloring 2 tbsp Natural unsweetened cocoa powder 6 tbsp All-purpose flour Confectioner’s sugar (for dusting) Melted dark or semi-sweet chocolate, for decoration (optional) Raspberries or sliced strawberries, for serving Steps: Set over rack in center position and preheat at 450 degrees Spray 4-6 ramekins with nonstick cooking spray Melt the butter and white chocolate in the top of a double boiler, stirring until smooth, and stir in confectioner’s sugar Whisk eggs and egg yolks in a large bowl, and stir in red food coloring/chocolate mixture Whisk cocoa and flour together in a small bowl, then add batter and stir Divide batter evenly among the ramekins, then place ramekins on a baking sheet and bake until sides of cakes are set but centers are soft (14-15 min) Let cakes sit for 2 minutes, then invert onto dessert plates Serve cakes immediately, dusted with confectioner’s sugar and with berries on the side
