Recipe:
1 cup all-purpose flour
1/2 cup Dutch process cocoa or unsweetened cocoa
1 teaspoon baking soda
1/2 teaspoon sea salt
2 large eggs, at room temperature
1/4 cup unsalted butter melted and slightly cooled
1/4 cup canola, vegetable oil, or melted coconut oil
3/4 cup packed light brown sugar
1 teaspoon pure vanilla extract
1 1/2 cups packed shredded zucchini
1 cup semisweet chocolate chips, divided
Combine dry ingredients. Combine wet ingredients. Gently mix wet and dry together and fold in shredded zucchini and 3/4 cups chocolate chips. Pour into a grease or parchment paper lined bread pan. Bake 350’f for 50-60 minutes.
Cool on a wire rack.
Gluten free, dairy free, and egg free recipe alternative:
I substituted 1 to 1 GF flour.
I used (2) flax eggs in place of eggs. To make a flax egg mix 1T flax to 3T hot water and set aside for 3-5 minutes.
I used vegan butter and coconut oils to replace the fats.
