Ready in 2 hours and 30 minutes
Servings: 7
400 calories

Ingredients :

For the dough
650 g flour
400 ml milk
5 g dry yeast
10 g sugar
2 eggs
15 g salt
- For the filling
150 g pork cracklings
100 g lard
50 g olives
1 tsp ground black pepper
- For decoration
1 egg
Cumin seeds

Preparation:

Mix yeast with warm milk and sugar.
Add eggs in and salt.
Gradually add the flour.
Knead the dough for 5 minutes with a kitchen mixer, or 10 minutes by hand.
Cover the dough with clingfilm and keep in a warm place to rise, until double in size.
Prepare the filling.
In a food processor, mince the pork scratchings, then add olives.
Add lard, a pinch of salt and black pepper.
Mix everything together.
After the dough has risen, roll it into a rectangle, on a floured surface.
Add half of the pork scratchings paste and spread over the dough.
Fold the dough as follows: take the left side and fold it, then the right side and fold, now fold the top one and then the bottom one.
Cover with clingfilm and rest the dough for 15 minutes.
Roll it again in a rectangle and then spread the remaining filling .
Fold the dough again.
Rest for another 15 minutes.
Lastly, roll the dough 1 cm thick.
Wash with egg and pierce the dough with a knife. DON’T CUT INTO STRIPS. Only pierce the surface.
Cut into round shapes.
Transfer onto an oven dish.
Sprinkle cumin seeds over the shapes.
Cover with clingfilm and rest it for 20 minutes.
Bake in the oven, at 180℃ until golden brown.
Serve cold.

Tips:

You can make the recipe without olives. You can also add some other ingredients like cheese, or chilli peppers .
