This aint yo mamas Meatloaf! This Smoked Meatloaf recipe is one for the ages! It can be made for just about any occasion and friends and family will love it!
INGREDIENTS:
3lbs of Ground Chuck 80/20 or better
1lb Hot Ground Sausage or whatever you like. (If someone is sensitive to spicy food, then get regular)
1-Sweet Red Pepper
1-Large Onion of your choice (yellow
2-Stalks of celery
3-5 tablespoons of minced garlic
4-5 Sliced of bread of your choice (Sourdough)
Salt & Pepper
The BBQ Rub by Killer Hogs
2- Large Loaf Pans
Plastic Wrap

INSTRUCTIONS:
Combine all meat in a Large sized stainless steel bowl
Dice the onion, celery and bell pepper into small pieces and place in the bowl with the meat.
Tear the bread into small pieces and mix with 1/2 cup of milk and place in the bowl with the meat.
Combine all the ingredients in the bowl and use your hands to make sure its well combined.
Add a 1/2 cup of your favorite bbq sauce and salt & pepper to your liking, then add The BBQ Rub to your liking. Combine well with your hands and allow to set for 10-15 Mins.
Place plastic wrap into the loaf pans covering all sides and place combined meatloaf into the containers all the way to the top and make sure its worked into all the corners of the pans.
Wrap the extra plastic over the exposed meatloaf and place in the freezer for an hour or so.
Prepare your smoker and bring to 275-300 degrees
Remove the Meatloaf from the freezer and place onto a grilling grate and place on the smoker checking periodically
Once the internal temp has reached 155 take your bbq sauce out and glaze the meatloaf and continue cooking until the internal temp is 160-165.
Remove, Slice and enjoy!
