Mediterranean pasta & orange chicken recipe

Pasta is as simple a dish to whip up as any. But there comes a time when you want to try something different in your spaghetti. So why not take a look at Rana's idea for a Mediterranean pasta and orange chicken recipe.

We agree that it does sound like it takes hours to prepare, but once you have all your ingredients ready, the final result will wow your's and everyone else's palate to the point of them nagging you to share your secret!

Here is all you need to make a Mediterranean pasta with orange chicken:

Put 2 table spoons of honey, juice of 1 orange and half a teaspoon of saffron into a small saucepan. Stir until the honey dissolves. Season three chicken breasts will salt and pepper on both sides and pout the saffron sauce over them. Refrigerate for 30 minutes.

Cook your angel hair spaghetti in boiling water with a generous pinch of salt until al dente (easy to chew, but with a slight bite to it; don't want them to turn into mush, especially angel hair!)

Chop one onion and a cup of mushroom into slices, a cup of grape tomatoes in halves and finely chop some parsley. Heat two tablespoons of olive oil on a skillet and add your chopped veggies, along with some chopped scallions, some artichoke hearts from a jar, some pine nuts and cook them season with salt and pepper.

To arrange, place a serving of pasta on a plate, sprinkle some olive oil, then pour some of the veggie sauce, before adding the cooked and sliced chicken meat. Now that is a feast!
