In this video, we’re going to share with you a delicious recipe for goat cheese jalapeno poppers. This is a perfect keto-friendly snack, but by snack, we mean for a small meal rather than having them in-between meals. These are jalapeños stuffed with herb goat cheese and broiled with a little paprika on top. The peppers are healthy and loaded with vitamin C. These jalapeño poppers are zesty but not too hot. They are very easy, and they’re best when fresh and warm.

JALAPEÑO GOAT CHEESE POPPERS

Ingredients:

jalapeños
goat cheese (or your favorite soft cheese or Boursin flavor!)

Directions:

Cut the stem off the pepper and cut in half and clean out the seeds. (I do this with cooking gloves to prevent getting pepper juice into my skin. Pick up a bag at Bed Bath and Beyond or other kitchen shops. They are really handy.)
Fill the pepper halves with cheese.

Bake on a silicone sheet, foil, or parchment at 375 for about 20-25 minutes until the cheese begins to brown slightly, and when you see the pepper has softened.
Put on a plate and let it cool slightly, then serve warm.
These are great and even a spicier pepper mellows in the oven.
