Ken's Crab Boil:

3 qt. Water
2 tbsp. Granulated Garlic
1/2 tbsp. Worcestershire Sauce
1/2-1 tbsp. Concentrated Crab Boil Liquid
1-2 tbsp. Cajun Seasoning
1/2 c. Wine
5-8 Blue Crabs

Bring the first six ingredients to a boil. Add in the crabs. Cover and let boil 10-15 minutes until the crab shells are red. Turn off the heat. If making a gumbo, remove the crabs immediately to let cool and pick whilst reserving the boiling liquid for the gumbo. If not making a gumbo, let the crabs sit another 15-20 minutes to gain flavor.

Ken's Seafood Gumbo:

1 1/2 c. Crab Meat
1 lb. Shrimp, Peeled
1 lb. Cajun Pork & Crawfish Sausage (or Any Pork Sausage You Like), Sliced into Pieces
1 lb. 12 oz. bag Frozen Cut Okra
1 1/2 lb. bag Frozen Seasoning Blend
2 Bay Leaves
1/4 to 1/3 c. Oil
1/4 to 1/3 c. Self-Rising Flour
1 tbsp. Gumbo Filé
2 1/2 - 3 qt. Crab Boil Broth

Mix equal amounts of oil and flour in a pot over a low to medium heat. Stirring constantly, you'll want the roux to turn to a "chocolate" color before adding in the seasoning blend. Cook the roux and seasoning for about five to seven minutes before adding in the okra. Cook about three to five minutes before adding in the crab boil broth a little at a time to keep the roux from clumping. Add in the bay leaves. When the liquid is boiling good, add in the sausage slices, shrimp, and crab. Cook for about ten to fifteen minutes before adding in the filé powder (TIP: To keep the filé from clumping, you can mix it with about a half cup of water before adding it to the gumbo). Turn off the heat and make your rice. When rice is done, serve over the rice.

Ken's Rice:

6 c. Water
2 c. Par-Boiled Rice (aka Gold Rice or Golden Rice or Enriched Rice)
1 tbsp. Sea Salt
1/2 tbsp. Toasted Sesame Oil

Add all of the ingredients to a pot. Bring to a boil, lid, reduce the heat to medium, and let cook fifteen to twenty minutes. Turn off the heat and let the rice steam for another 15-20 minutes before fluffing and serving.
