Who doesn’t love cooking on the grill outdoors once the weather has finally warmed up?!.I decided to cook up some super delicious beef tenderloin packets that are topped off with a tasty tomato steak sauce and fresh basil, and wow was it delicious.

Ingredients for this Grilled Beef Packets Recipe with Tomato Steak Sauce:

For the Beef Packets:

• 2 thickly sliced green zucchini
• 2 thickly sliced yellow squash
• 1 bunch asparagus sliced into 2” pieces
• 2 seeded red bell peppers cut into 1” squares
• 1 peeled red onion cut into 1” squares
• 2 lbs baby Yukon potatoes cut in half
• 3 pounds beef tenderloin cut into 1” cubes
• ¼ cup Thrive® Algae Oil
• sea salt and fresh cracked pepper to taste

For the Tomato Steak Sauce:

• 1 cup crushed tomatoes
• 3 tbsp tomato paste
• ¼ cup soy sauce
• 3 tbsp Worcestershire sauce
• 4 garlic cloves
• ½ peeled shallot
• 2 tbsp Dijon mustard
• 2 tbsp brown sugar
• ½ tsp hot sauce
• chopped fresh basil for garnish

Serves 8

Prep Time: 20 minutes

Cook Time: 15 minutes

Procedures:

1. Preheat grill to high heat (500°).
2. In a large bowl combine all of the ingredients for the beef packets until well mixed.
3. Next, add a large handful of the mixture to the center of a 18”x18” piece of foil. Bring the 2 sides up together and fold over. Fold up the ends as well so that it is air tight. Repeat the process 7 more times.
4. Place the packets directly on the grill and cook for 15 to 20 minutes or until the beef and vegetables are browned and tender.
5. While the beef packets are cooking add all of the ingredients for the steak sauce to a blender and blend on high speed until smooth.
6. Transfer the sauce to a medium size sauce pot and heat over low heat until hot. Keep warm.
7. Evenly drizzle the steak sauce over top of the opened beef packets and garnish with basil.
