How to Make Homemade Ice Cream and Waffle Cones

If there’s one thing that is always in my freezer, it’s ice cream. I mean we seriously eat ice cream all the time, and when it’s summer time I’m pretty sure we eat ice cream just about every day. Recently I’ve been making homemade ice cream because there are so many different delicious flavors that you can make like strawberry ice cream or chocolate ice cream, or even a mixed berry homemade ice cream recipe like this one.

If you’ve had some animosity in the past about making ice cream because of all the procedures, timing, etc. let me just tell you it’s easier than you think, and this homemade ice cream recipe will for sure give you the confidence you need to keep making it!

How to Make Homemade Ice Cream and Waffle Cones
prep time: 10 minutes
cook time: 25 minutes
rest time: 7 ½ hours
serves 9

Ingredients:

For the Ice Cream:

2 cups of cold heavy whipping cream
14-ounce can of sweetened condensed milk
½ cup each of fresh blueberries, blackberries, raspberries and trimmed strawberries
juice of ½ lemon
1 teaspoon of vanilla
½ cup of sugar

For the Waffle Cones:

¾ cup of sugar
1 cup of flour
3 egg whites
¼ teaspoon of sea salt
1 teaspoon of vanilla
1/2 cup of whole milk

Procedures:

1. Ice Cream: Add the heavy cream to a standing mixer with the whisk attachment and whisk on high speed for 5-7 minutes or until stiff peaks are formed. Fold in the condensed milk and freeze for 1 hour.
2. Next, rinse the berries and add them to a medium size pot along with the lemon juice, vanilla and sugar and cook over medium-low heat for 20 to 25 minutes or until it is thick and slightly chunky. 3. Freeze the mixture for 45 minutes to 1 hour.
4. Next, fold the berry mixture with the ice cream base making sure to reserve about ¼ cup of the berry mixture.
5. Transfer the mixed berry ice cream to a metal loaf pan and drizzle over top the remaining chilled berry mixture. Freeze for 6 hours.
6. Waffle Cones: Heat your waffle cone maker over low-medium heat.
7. Add all of the ingredients to a large bowl and whisk until completely combined.
8. Pour 2 ounces into the waffle cone maker and cook for 1 to 2 minutes or until browned and cooked.
9. Immediately transfer the flat cooked waffle cone to a cone mold and roll it up to make a waffle cone. Let sit for 2 to 3 minutes or until it has hardened up. Set aside and repeat until the batter is gone.
10. Scoop the ice cream into the waffle cones and enjoy!
