Ingredients:

1. Okra (fresh or frozen) - about 2 cups, chopped
2. Meat (chicken, beef, goat meat, or fish) - about 1 pound, cut into bite-sized pieces
3. Stockfish and/or dried fish - optional
4. Palm oil - 1/2 cup
5. Onions - 1 medium-sized, chopped
6. Tomatoes - 2 medium-sized, chopped (or you can use tomato paste)
7. Pepper (scotch bonnet or any hot pepper of your choice) - to taste, finely chopped
8. Seasoning cubes/powder - to taste
9. Salt - to taste
10. Water - as needed

Optional Ingredients:

- Ugu leaves (fluted pumpkin leaves) or spinach - about 2 cups, chopped
- Other vegetables like carrots or bell peppers

Instructions:

1. **Prepare the Ingredients:**
- Clean and cut your meat into bite-sized pieces.
- If you're using dried fish and stockfish, soak them in hot water until they become soft.
- Chop the okra into small pieces.

2. **Cook the Meat:**
- In a large pot, add the meat, onions, seasoning cubes/powder, and salt.
- Add enough water to cover the meat, then cook until the meat is tender.

3. **Prepare the Palm Oil Mix:**
- In a separate pot, heat the palm oil until it becomes clear (not too hot).
- Add chopped onions and tomatoes to the oil, and stir. Cook until the onions and tomatoes are soft.

4. **Add Okra:**
- Add the chopped okra to the pot with the palm oil mix.
- Stir well and let it cook for about 5-7 minutes, stirring occasionally.

5. **Combine Meat and Okra Mix:**
- Transfer the cooked meat to the pot with the okra mix. If you're using stockfish and dried fish, add them at this point.
- Add the chopped pepper and more seasoning if needed.
- Allow it to simmer for about 10-15 minutes, stirring occasionally.

6. **Add Vegetables (Optional):**
- If you're using ugu leaves or spinach, add them to the pot and stir. Let it cook for an additional 5 minutes.

7. **Adjust Seasoning:**
- Taste the soup and adjust seasoning or salt if necessary.

8. **Serve:**
- Your Okro soup is ready to be served! It is commonly enjoyed with fufu, rice, or any staple of your choice.
