Introduction:
This Grilled Vegetable Salad with Feta is a medley of smoky flavors combined with the tanginess of feta cheese. It's a celebration of vibrant colors and robust tastes, perfect for a refreshing and healthy meal! 🌽🍆🧅
Ingredients:
2 zucchinis, sliced lengthwise
2 bell peppers (assorted colors), halved and deseeded
1 large red onion, sliced into rounds
1 cup cherry tomatoes
4 cups mixed salad greens
1/2 cup crumbled feta cheese
3 tablespoons balsamic vinegar
4 tablespoons olive oil
2 cloves garlic, minced
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions:
Prepare the Vegetables:
Preheat the grill to medium-high heat. Brush the zucchinis, bell peppers, red onion slices, and cherry tomatoes with olive oil. Season with salt and pepper.
Grill the Vegetables:
Grill the vegetables until they have grill marks and are slightly tender. This usually takes around 4-5 minutes per side for zucchinis, 5-6 minutes per side for peppers and onions, and about 2-3 minutes for cherry tomatoes. Remove them from the grill and set aside to cool.
Prepare Dressing:
In a small bowl, whisk together balsamic vinegar, minced garlic, remaining olive oil, salt, and pepper to create a tangy dressing.
Assemble the Salad:
Arrange the mixed salad greens on a serving platter. Cut the grilled vegetables into bite-sized pieces and scatter them over the greens.

Sprinkle crumbled feta cheese over the salad. Drizzle the balsamic dressing generously over the grilled veggies and greens.
