🍰 Welcome back to the Kitchen Brothers' channel! Today, we're excited to share with you our foolproof recipe for creating the perfect sponge cake. Follow our steps, and you'll impress your guests with its fluffiness and beautiful texture.

🥄 Ingredients:

1 part sugar
1 part all-purpose flour
Egg yolks and whites separated, but together they make 2 parts
A pinch of salt

Separating yolks and whites is easy—check out our simple technique! The number of eggs depends on your baking pan size; for our 25cm x 20cm x 6cm pan, we used about 500g of eggs, translating to 250g each of flour and sugar (1 part each).

Prepare your rectangular baking pan with parchment paper for easy use. As our oven doesn't have a fan, we bake at 180°C with both top and bottom heating elements.

While the oven preheats, beat egg whites with a pinch of salt. If you don't have an electric mixer, a hand mixer works, but it'll take longer. As the whites stiffen, mix yolks with sugar,

WARNING!
From now on, all mixing should be done only one way. If you mix clockwise, do it clockwise only!

Add yolks to the stiff egg whites, mixing slowly in one direction. Sift flour into the mixture using a fine sieve and mix again in the same direction. Transfer the batter to the prepared pan and spread it evenly.

Bake for 30-45 minutes in the center of the preheated oven until the cake browns. Trim the edges while it's hot for an even surface.

Let the cake cool for about an hour before slicing it. For round cakes, a cake slicer can be handy.

If you followed our recipe, we hope your sponge cake turns out as fantastic as ours! Decorate it with whipped cream, jam, or fruits, or use it to create a show-stopping layered cake that will wow your guests.
