Ingredients:
1 lb ziti pasta
1 large eggplant, sliced into rounds
2 cups marinara sauce
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup ricotta cheese
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and black pepper to taste
Fresh basil leaves for garnish
Instructions:
Prepare Ziti:
Cook the ziti pasta according to package instructions until just al dente. Drain and set aside.
Preheat Oven:
Preheat your oven to 375°F (190°C).
Eggplant Slices:
Salt the eggplant slices and let them sit for 15 minutes to release excess moisture. Pat dry with paper towels. In a skillet, cook the eggplant slices until golden brown on both sides. Set aside.
Prepare Cheese Mixture:
In a bowl, combine ricotta cheese, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix well.
Assemble Layers:
