Ingredients:
1 1/2 cups rolled oats
1/2 cup vanilla protein powder
1/2 cup almond butter
1/4 cup honey or maple syrup
1/4 cup almond milk
1/2 cup dried cranberries
1/4 cup chopped almonds
Pinch of salt
Instructions:
Prepare Dry Ingredients:
In a large mixing bowl, combine rolled oats, vanilla protein powder, dried cranberries, chopped almonds, and a pinch of salt. Stir until well mixed.
Mix Wet Ingredients:
In a microwave-safe bowl, combine almond butter, honey (or maple syrup), and almond milk. Heat in the microwave for 30 seconds, or until melted. Stir until smooth.
Combine Wet and Dry Ingredients:
Pour the wet mixture over the dry ingredients in the mixing bowl. Stir until all the ingredients are evenly incorporated and a thick, sticky dough forms.
Press Into Pan:
Line an 8x8 inch baking pan with parchment paper. Transfer the dough into the pan and press it down firmly and evenly using a spatula or your hands.
Chill and Set:
Place the pan in the refrigerator for at least 1 hour to allow the bars to firm up and set.
Slice Into Bars:
Once chilled, remove the pan from the refrigerator and lift the parchment paper to remove the block of bars. Place it on a cutting board and slice into bars of your desired size.
Serve or Store:
Serve the Cranberry Almond Protein Bars immediately, or store them in an airtight container in the refrigerator for up to one week.
