Introduction:
B.E.C. Breakfast Muffins are a convenient and portable breakfast option packed with the classic flavors of bacon, egg, and cheese. These muffins are perfect for busy mornings or as an on-the-go snack any time of day.
Ingredients:
6 slices bacon, cooked and crumbled
6 large eggs
1/4 cup milk
Salt and pepper, to taste
1 cup shredded cheddar cheese
1/4 cup chopped chives or green onions (optional)
Cooking spray or muffin liners
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing with cooking spray or lining with muffin liners.
Prepare the Bacon:
Cook the bacon slices in a skillet over medium heat until crispy. Transfer the cooked bacon to a paper towel-lined plate to drain excess grease. Once cooled, crumble the bacon into small pieces.
Prepare the Egg Mixture:
In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Assemble the Muffins:
Divide the crumbled bacon evenly among the muffin cups, filling each about halfway.
Sprinkle shredded cheddar cheese over the bacon in each muffin cup.
Pour the egg mixture over the bacon and cheese, filling each muffin cup almost to the top.
If desired, sprinkle chopped chives or green onions on top of the egg mixture for added flavor.
Bake the Muffins:
Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg is set and the tops of the muffins are golden brown.
Serve and Enjoy:
Remove the muffin tin from the oven and let the muffins cool for a few minutes before removing them from the tin.
