Here's what you need for each pound of meat:
• 1 teaspoon Salt
• 1/4 teaspoon Garlic Salt
• 1/2 teaspoon Dried Parsley
• 3/4 teaspoon Ground Sage
• 1/4 teaspoon Fresh Coarse Ground Black Pepper
• 1/4 teaspoon Dried Thyme
• 1/4 teaspoon Crushed Red Pepper Flakes (Optional)
• 1/4 teaspoon Ground Coriander
• 1/4 teaspoon MSG (Optional)
• 1/8 teaspoon Oregano
The recipe is adaptable to your batch size – simply adjust the quantities based on the weight of your meat. In this video, I demonstrate the process with a 13-pound batch, but the recipe is conveniently scaled per pound.
A note on ingredients: I opted to include MSG in my recipe, which significantly enhanced the flavors, but feel free to omit it if you prefer. Also, I skipped the red pepper flakes this time, and the result was even more delightful.
