I DID make a side dish!

We may not have made the party but Teddy's quinoa sweet potato casserole side dish came out delicious!
Recipe:
2 sweet potatoes, 2 cups quinoa, 4 cups chicken broth, 3 cloves garlic, tablespoon butter, 1/2 cup coconut milk, 2 eggs, 1/2 raw cheese. Sauté cubed sweet potatoes in 4 quart pressure cooker for five minutes in butter, stick in oven at 350 for 15 minutes, put back on stove and add quinoa and chicken broth. Pressure cook for 20 minutes, release pressure and add coconut milk and eggs (stirred together first), add cheese on top and put back in oven for 20 minutes.
