Blueberry Muffins
Ingredients:
2 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted and cooled
2 large eggs
1 cup milk
1 teaspoon vanilla extract
1 and 1/2 cups fresh blueberries (or frozen, but do not thaw before using)
Instructions:
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease them lightly with butter or non-stick cooking spray.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
In a separate bowl, beat the eggs lightly. Then add the melted butter, milk, and vanilla extract. Stir until well combined.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix. It's okay if the batter is a bit lumpy.
Gently fold in the blueberries until evenly distributed throughout the batter.
Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Bake in the preheated oven for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
