This recipe is very new to me and I cannot find any information about the origins so it really must be a recent discovery (or its a thousand years old, who knows?) Either way these cured egg yolks are incredible, long life in the fridge, super umami flavour perfect with pasta, salads or risotto. If you have a dairy allergy then use these instead of parmesan cheese
