Better Than Store-Bought: Simple Artisan No Knead Bread

If you've ever wanted to make aromatic, delicious bread with minimal effort, this video is for you. With just a few simple steps, you can create a soft, airy crumb and a crunchy crust like only few bakeries offer. And it's all possible without perfectionism! Where the professional would say "you can't do it like that", the home baker can just wing it – and in the end, it will still be very yummy!

You probably have most of what you need in your kitchen: a bowl, a spoon (you can use your bare hands, too) and an oven. The only thing you might need for results like in the video is a cast-iron casserole. I use a premium product from Le Creuset:

Then you only need flour, water, olive oil (optional), salt and yeast.

Put 500 g (4 cups) strong bread flour into the bowl, add 375 ml (1.5 cups) water, 2 tbsp. olive oil, 2 tsp. salt and 5 g fresh yeast (1.5 g dry yeast). Stir it until you have no dry flour left and let it develop for 18 hours in your fridge, then continue as shown in the video.

Alternatively, use only 1 g yeast and let the dough develop at room temperature. If you want your bread quicker, use 5 g yeast and only 4-6 hours of development. The recipe is very forgiving and can be used very flexibly.
