Crispy Chicken Thighs with Wilted Pea Microgreens Recipe
Prep Time: 10 minutes
Cook Time: 1 hour 15 minutes
Pre-heat the oven to 400F
Put 3 chicken thighs into a cast iron skillet
Add some mushrooms to the skillet
Chop up a whole garlic bulb and add the entire bulb to the skillet.
Add 1/4 cup of lemon juice to the skillet
Coarsely chop a sweet potato and add.
The secret to crispy chicken skin is putting some butter underneath the skin. Lift the skin of the chicken thigh with by rubbing your index finger underneath the edge of the skin at the edge of the thigh. Place a pat or two of butter underneath the skin and between the thigh.
Add a little more butter on top of everything.
Season with your favor seasoning (salt & pepper is just fine).
Place in the oven and cook for about 1 hour and 15 minutes until the chicken skin is a crispy golden brown and the thigh meat has reached an internal temperature of at least 165F.
Take out some of the chicken and veggies from the skillet.
Put some pea microgreens into the hot skillet being and wilt them in the skillet.
Plate and enjoy!
