Thai-ish Lettuce Wraps - THM S

This is my take on the Thai Lettuce Wraps from the Cheesecake Factory, using only the parts I really like!!

-Cooked chicken, seasoned however you like. I use frozen precooked blackened chicken.
-butter lettuce leaves
-A few carrot matchsticks
-a small pile of shredded purple cabbage
-Asian Zucchini slaw
-Peanut Sauce
-Sweet Chili Sauce
Asian Zucchini Salad
-One small zucchini (you are welcome to use cucumbers if you prefer, but ew)
-pinch of mineral salt
-sprinkle of crushed red pepper flakes
-2 tbs rice vinegar
-2 tsp sesame oil
-1 tsp Super Sweet/Pyure
-sprinkle of sesame seeds
Peel zucchini and slice in half, then slice in very thin slices. Mix all ingredients and set aside.

Peanut Sauce
-1 TBS natural PB
-1 TBS defatted PB powder
-2 tsp Bragg's Liquid Aminos
-2 TBS lime juice
-1/2 tsp crushed garlic
-1 tsp chohula
-2 pinches salt
Mix well, set aside

Sweet Chili Sauce
-1/4 cup rice vinegar
-1 tbs fish sauce
-1/4 cup hot water
-3 TBS super sweet/pyure
-juice of one lime
-1 tsp garlic
-1 tsp chili paste, or 1 tsp red pepper flakes (less if you don't like really spicy)
Mix well, boil for 2-3 minutes and add a small sprinkle of gluccie while whisking. Allow to thicken another minute or so. Set aside.

Using butter lettuce leaves as wraps, fill with chicken, Asian salad, carrots, cabbage, and sweet chili sauce and dip into peanut sauce. Thank me later.
