1 lb mixture of your choice beef , pork or lamb
1/2 an onion chopped very fine
1 egg
3 garlic cloves ( i used 3 TBS minced garlic )
1 tsp salt
1.5 tsp pepper
1 tsp cayanne
1 tsp smoked paprika
Remember after mixing all of the ingredients let the mixture sit at least 4-5 hours....best over night!
Make your finger length sausages and grill away!

Ingredients:
Sausage: I used a ring of garlic sausage
Cheese: I used a block of marble cheese cut into cubes
Bacon: Not to thin and not to thick lol
Toothpicks : To hold things together
Seasonings: I used Creole fixx by Motley Que ( use what you like)
Hungarian Yellow pepper ( you can use a jalepeno )
Sauce: Combination of Rib Candy (apple habenaro) and Blues Hogg Competition blend.
Directions:
Slice sausage into rings a bit bigger than a Pencil
Cut Bacon long enough to have a slight overlap around the sausage slice.
Push through tooth pick to secure bacon to sausage making a tube.
Slice the pepper into small disks and place one in each pig shot
Place a cube of cheese in each pig shot
Use another tooth pick to secure the top of the pigshot.
Season the Pig Shot
Place in the smoker at 300 F
Cook till is a bit crispy and sauce, let sauce set remove tooth picks and enjoy!

1 to 1,5 pounds Mushrooms
Crushed Garlic

2 TBS flour
1 TBS Dried Dill

2 cups chicken stock
1/2 cup heavy cream
1/2 cup half /half
1/2 cup sour cream
1/2 lemon (juice of)
Salt and pepper to taste.
Instructions:
1: Chop Onion
2: Chop Mushrooms
3: Mix Garlic, Dill, Paprika together. (spice Mixture)
4: Melt butter in Pot
5 : add onions and saute till transluscent.
6 :Add Mushrooms cook for about 30 mins
7: Add your spice mixture stir
8: Add your Soy sauce and mix
9: Add your Broth and potato stir and cover for 30 mins
10: mix your flour and milk together till it is smooth and add to soup.
11: Simmer for 30 mins and add your sour cream. Stir and simmer.
12: Simmer for 15 -30 mins stir and serve. add salt and pepper to taste!
Serve and Enjoy

The Best Classic salisbury Steak Recipe - Swanson's eat your heart out!
Growing up you would always see the TV dinner commercials. Though we did not have the money to have these for dinner. I always wanted to try one. I did and I thought to myself...I can do better! Very simple and budget friendly meals to make. Follow along and learn how to make the classic Salisbury steak.
Ingredients:
1 lbs ground beef (I used a combo of venison and pork)
2 TBS ketchup
2 TBS worsterschire sauce
1 TBS Soy Sauce
2 eggsSeasoning (I used Motley Que all purpose see link below to order!)
1/2 cup breadcrumbs
For the Sauce
Mushrooms sliced
Butter 2 TBS
flour (about 2 TBS you might need more)
beef broth (one cup)
worsterschire sauce
1 med onion chopped
Step one:
Mix the beef , ketchup, worsterschire sauce, soy sauce. eggs and seasonings together and set aside in the fridge for an hour.
Step 2:
Heat your skillet and melt your butter
Fry your patties till a nice sear on both sides appears
Set aside.
Step 3:
Add your onions and mushrooms to the skillet.
cook untill both are a nice brown color and add your flour
Cook untill it is dry and you can not see the white of the flour
add your broth.
Simmer till it starts to thicken and add your patties, They will finish cooking in the sauce.
When sauce has thickened and patties are cooked serve with mashed potatos and veggies. (to get the TV dinner feeling)

Homemade Crispy Chicken Burgers that will rival any restaurant. (cost effective!) I had one extra burger and took it to work the next day....SUPER NUMMY!
Ingredients
Chicken Breasts
Flour a 1-2 cups depending on how many you are making.
Seasoning I used Motley Que "Creole fixx" See bellow for ordering info
eggs ( I used 1 for 2 chicken breasts)
Butter milk 2 cups. (should be plenty for a few burgers)
Burger sauce (mayo, Raspberry Chipotle bbq sauce mixture 3 tbs to 1 ratio)
Ketchup
Large tomato
Lettuce
Cheddar Cheese Slices
Burger Buns (I used Brioche)

Country Fried Steak
This is one dish that I have I have always wanted to make but never tried. Not hard at all!
All you need
1. Flour 2 cups
2. Seasoning (I used Motley Que "Creole Fixx" See below for ordering info.
3. 2 Eggs
4. Cooking Oil
5. Butter Milk 2 cups
6. 4-5 minute steaks (I used venison but you can use beef or Chicken)

How to Make Dutch Babies - On the smoker (German pancakes)
You can make this dish in an hour! It is soooooo easy to make. Follow along and give it a try.
Ingredients
2 large room temperature eggs
3/4 cup room temperature milk
1/2 cup flour
vanilla extract
1/4 tsp salt
2 tbsp butter
On the smoker at 375-400 F. 20-25 min
Finish off with melted butter and lemon juice
sprinkle with icing sugar

Smoked Ham Party Ring - Perfect for Christmas & New Years
A very tasty treat for Christmas or New Years Eve. Heck any party or game night!
Ingredients:
2 packages pilsbury crescent roll dough
Mozzarella 1/2 cup
100g black forest ham
100g Salami (your choice)
100g prosciutto
5 slices of havarti or provalone
fresh basil leaves
hot peppers diced (your choice)
sundried toamtoes diced
Build the ring up starting with the dough. (see video)
I started with:
Ham
Mozza
Basil
Salami
Hot peppers
Sundried Tomatoes
Prosciutto
Than the Cheese (havarti)
Wrap the Dough over and connect,
Pre heat Smoker to 375 F
Smoke for 30 mins and than check.
Pull it when it is golden brown.
Serve with either a Pizza sauce or your favourite olive oil dip.
I used LumberJack Pellets Fruit blend.

Smoked Shotgun Shells! Your go to appetizer!
This is a great appetizer and is easy to make! In reality it is just a manicotti shell stuffed with your meat filling.
You can use this recipe as a starting point and change it up if you feel the need.
Ingredients:
500g ground meat ( I used venison and pork 50/50)
Garlic 2-3 cloves ( I used a ready made crushed garlic)
A box of manicotti
Beef Fix by Motley Que (check out link below to order)
Slap ya Mama cajun seasoning
Kosmos Cow cover
Sweet baby rays Honey
Winged Buffalo hot sauce by Bow Valley
Cheddar Cheese
Bacon (not too thick)
For the smoker fuel I used Lumber Jack Pellets Apple flavor.
Instructions:
1: Mix all of the ingredients together. (pretty simple!)
2: Load your shells.
3: Wrap the shells with Bacon.
4: Season the shells and put in the fridge for min. 4 hours. This will help soften the shells)
5: Pre Heat smoker to 275 to 300 F
6: Place in smoker for an hour and check temp and crispness of bacon.
7. Sauce the shells at 165F
8. Pull them off and enjoy!
You can make bigger batches and freeze for later.

Super Tender Braised Beef Shank
The ultimate comfort food. Braised beef shank or Osso Buco in Italy. This dish takes very little time to prepare but a few hours to cook. It is definatly worth the wait.
Ingredients
1. Beef Shank ( 3 )
2. Flour ( to dredge the shank)
3. 2 Carrots chopped
4. 2 Celery stalks chopped
5. 1 Large yellow onion chopped
6. 1 Cup red wine
7. 1 Cup Beef broth
8. 2 Bay leaves
9. Salt and pepper to taste
10. Olive oil
11. Diced or Pureed tomatos
12. 2-3 cloves garlic minced
Instructions:
1: Cover shank in flour
2: Preheat Dutch oven (or similar) to Med High Heat
3: Fry Beef shank till a nice brown colour and remove.
4. In the same pan saute onions and garlic. (cook till translucent)
5. Add wine and deglaze pot.
6: Add in celery, carrots, broth ,tomatoes, bay leaves and salt and pepper to taste,
7: Place Shank in the pot and make sure the meat is just covered.
8: Cook at med high heat for 90 mins than reduce heat and simmer till liquid has been reduced.
I love this dish with garlic mashed potatoes but you can also use Polenta.

Burgers Made with Johnsonville Pork and beef with A Parsley Garlic Aioli
Had a craving to make a Burger a Big Burger lol. The Johnsonville Mild Pork mixed with ground beef did the trick!. I only added a bit of rub before hitting the smoker. The Aioli was fantastic! As for Garnish use what you like!
I was trying to make a double decker burger but it was way harder than I thought! Should have kept it simple.. A single!
It was one of my best tasting burgers that I have made. Enjoy!

Smoked Seafood Paella
Making Paella may seem like a daunting task...Well It Isn't. It is a simple dish that anyone can make. Follow along as we making an incredible Paella on a Pellet Grill!
Ingredients
Olive oil (3-4 tablespoons)
4-5 Garlic cloves (minced)
Chorizo sausage dry
1 medium sized yellow onion (chopped fine)
1 red pepper (diced)
1 large tomato (diced )
2 cups Arborio Rice
6 cups (chicken or seafood broth)
1 teaspoon saffron ( its expensive) You could use turmeric as a substitute.
1 lb mussel (black)
1/2 lb clams
10 large shrimp
1 large cast iron pan ( i did not have a Paella pan)
Instructions:
-Pre-heat pellet grill to 450 F
- Heat up the Pan with the olive oil
- heat up saffron and broth to a slow boil and remove from heat and set aside.
-Add onions and garlic to pan. cook until translucent.
-Add red pepper and tomato and cook till softened.
-Add in the rice and stir until it is fully mixed. cook for about 5 minutes.
-Add broth just enough to cover the rice mixture. Cook until rice is almost fully cooked.
Remove the pan and add shellfish. (any muscles that will not close at this time..throw out)
Return to the pellet grill and cook until liquid is almost gone, rice is cooked and shell fish is also cooked. (no need to stir..just cook).
Once done remove and let it sit for about 5 mins. Enjoy!

How to make Goulash- Slovenian Style
A savoury dish, easy to make and very very tasty! Follow these easy steps and enjoy a traditional dish from Slovenia. (similar to Austrian,Hungarian or German Goulash)
I used bison, but you can use any meat that you have on hand. I like to use a mixture of beef, and pork. (it was a treat to have a bison roast to use.) This recipe will make cheap cuts of meat taste great!
Here is a list of ingredients
Ingredients
5 tbs Lard or Butter
5 medium onions -Chopped
6 garlic cloves - Chopped
2 tsp ground cumin
2 tsp ground pepper
4 tbs smoked paprika
2 tsp dried marjoram
3 lbs Bison, or Beef cubed (1.5") or a mixture of beef,pork ,wild game.
4 tbs flour (all purpose will do )
4 cups beef broth
1 cup red wine
salt to taste
You may need corn starch to thicken it up.
1, Chop up your meat into bite size pieces about 1-1.5"
2. Place on your smoker. set to smoke. Smoke for about 45min
While you are waiting for your meat.
3.Melt butter and saute the onions till translucent
4. Stir in all of the spices. (garlic, pepper, marjoram ,cumin and salt)
5. cook on med heat until onions are a nice dark brown colour. and set aside.
When your meat is ready
6. Cover the meat with flour. This will help to thicken up the Goulash.
7.Heat up your pan and brown the meat and than mix in with the onions.
8.Deglaze your pan with wine (loads of flavour there) and mix that in with your meat and onion mixture.
9. Add Broth until it covers the meat.
10. Bring to a boil and reduce heat to a simmer.
11. Let it cook for 90 minutes to 2 hours and check for tenderness. Cook longer if needed.
12. If the goulash is a bit to soupy cook uncovered for 30 minutes. If this does not work you can add a mixture of cornstarch and water.
You can serve it with potatoes,noodles,dumplings, bread or by itself!
A hint. Goulash is always better the next day!

Mouthwatering Bacon Pancake Recipe
A simple easy dish! breakfast, lunch or dinner these pancakes are to die for!
Ingredients:
1 1/4 cup flour
3 teaspoons baking power (not soda)
1 Tablespoon sugar
2 eggs (separate)
1 1/2 cups milk
1/4 cup melted butter
Thick cut Bacon
Maple syrup
Mix dry goods together
Beat egg yolks and add milk and butter
Whip. egg whites till fluffy
Mix in yolk mixture with dry goods
Fold in egg whites
Continue to mix till smooth
Heat the cast Iron to a med high heat. Place a table spoon of butter or cooking oil. Place about half a cup of batter to make a decent size pancake. Once it starts to toughen up a bit place the bacon strips on top of the pancake. Cover up the bacon with batter.
Flip and wait till pancake is ready! Slather with your favorite topping! I love maple syrup!
