Pulled Beef Tacos | Smoked Short Ribs on LSG
I show how to make Pulled Beef Tacos using Short Ribs smoked on the Lone Star Grillz offset smoker. I also make a Jalisco style braising liquid similar to the liquid used when making Birria.

Pulled Beef Tacos Recipe
4 Short Ribs
3 Guajillo chilis (deseeded)
2 New Mexico chilis (deseeded)
8 cloves garlic
1/2 cup onion
1 teaspoon dried thyme
2 teaspoons dried Mexican oregano
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
2 teaspoons Anchiote paste
12 oz cola
8 oz beef stock
1 bunch fresh cilantro
1 teaspoon salt
1 teaspoon black pepper
3 bay leaves
1 lime halved and squeezed
Instructions:
1) Put your favorite rub on the short ribs or just use salt/pepper for a rub.
2) Smoke ribs at 250F until they reach internal temp of 160F (about 3 hours).
3) While ribs are smoking, make the braising liquid as described next!
Jalisco Style braising liquid:
a) Boil chilis in water for 5 mins, then turn off the heat and let chilis steep for 30 mins or longer.
b) Place chilis into a blender along with remaining ingredients, except bay leaves and lime, and blend until you get a smooth liquid.
4) Once ribs have reached internal temp of 160F, place the smoked short ribs into a deep pan and pour braising liquid over the ribs.
5) Add Bay leaves and squeeze lime over the ribs.
6) Cover ribs with foil and continue cooking until ribs are fall apart tender (around 210F internal).
7) Allow ribs to rest at least 30 mins, then pull beef to shred it for tacos.

Easy Hamburger Beef Stroganoff Recipe
I am making homemade hamburger beef stroganoff! This easy and quick weeknight meal is super tasty. Recipe is in the description below.
Hamburger Stroganoff recipe
Ingredients:
1 pound ground beef
1/4 cup minced onion
1 clove minced garlic
1/4 cup butter
2 teaspoons salt
1/2 teaspoon black pepper
1 Tablespoon all purpose flour
2 Tablespoons parsley
8 oz Egg Noodles (Kluski noodles)
1 jar sliced mushrooms
1 can Cream of Chicken soup
1 Cup Sour Cream
1) Saute onion & garlic in butter over medium heat until onions are translucent (5 mins).
2) Add ground beef and brown.
3) Once meat is browned, add flour, salt, pepper, and mushrooms. Cook over med-low 5 mins.
4) Add soup and simmer uncovered 10 mins.
5) Stir in sour cream. I usually find that 3/4 cup of sour cream is enough for my taste!
6) Continue simmering a few more minutes to heat sour cream through, then remove from heat.
7) Add cooked noodles and sprinkle with parsley. Save some parsley as a topping when plated!

14:01 Cheers T-ROY, I smoked a Texas style brisket for a family gathering and it was a great success. When I served it up, I found that the point was much more juicy and tender than the flat. Do you think that the point may have been juicier because it got to a higher temperature (190) than the flat (180) or do you think I may have overcooked the flat? 6 hours unwrapped, 2 hours wrapped, 2 hours rest, no spritz.

BBQ Tri Tip on Weber Kettle
Tri Tip grilled on the Weber Kettle and brushed with a homemade BBQ Sauce. This was the best Tri Tip I've ever eaten! Recipe is below!

Ingredients
1 (2 lb.) Tri-Tip Roast
2 Tbsp. olive oil
Rub
1/2 tsp. kosher salt
1/2 tsp. celery salt
1/4 tsp. black pepper, freshly ground
1/4 tsp. granulated garlic
Sauce
1/2 cup ketchup
2 Tbsp. white wine vinegar
1 Tbsp. Worcestershire sauce
2 tsp. molasses
1 tsp. soy sauce
1/2 tsp. prepared chili powder
1/2 tsp. granulated garlic
1/4 tsp. celery salt
1/4 tsp. liquid hickory smoke
Directions
1) To make the sauce: In a medium saucepan, combine the sauce ingredients with 2 tablespoons of water. Bring to a simmer over medium heat and cook for about 1 minute, stirring occasionally. Set aside half of the sauce for dipping.
2) To make the rub: In a small bowl, thoroughly mix the rub ingredients with your fingertips.
3) Allow the roast to stand at room temperature 20 to 30 minutes before grilling. Lightly coat the meat with the oil and season with the rub, pressing the spices into the meat. Grill over Direct Medium heat until well marked on both sides, about 10 minutes, turning once. Move the roast over Indirect Medium heat and cook to the desired doneness, 20 to 30 minutes more for medium-rare, brushing the meat with the remaining half of the sauce on both sides and turning it over every 5 minutes or so. Remove from the grill and let rest for 5 to 10 minutes. Cut the meat across the grain into very thin slices. Serve warm with the dipping sauce.

Steak Au Poivre with Cognac Cream Sauce | Pepper Crusted Steak
I show you how to make Steak Au Poivre with a rich Creamy Cognac Cream sauce. I chose to use a Filet Mignon for the steak and seared it in a cast iron skillet. This classic French dish is excellent and easy to make on a weeknight or for date night.

Steak Au Poivre Recipe
Filet Mignon 8oz (or steak of your choice)
3 Tbsp Unsalted Butter (divided)
1 Tbsp Vegetable Oil
8 oz Beef stock
1/4 cup Brandy (optional)
1/2 cup Heavy Cream
1 sprig of fresh Rosemary
1/3 Cup Fresh cracked course Black Pepper
1 Tbsp Kosher Salt
Instructions
1) Rub steak with salt and coat heavily with black pepper.
2) Heat iron skillet on high and add 2 Tbsp butter and the vegetable oil.
3) Once skillet is smoking hot, add steak and sear for 4 mins per side for med-rare doneness. Cook longer per side for medium or well done steak.
4) Set steak aside. Let skillet cool for a few minutes, then add beef stock and deglaze skillet.
5) Over a medium heat, add Brandy and allow alcohol to burn off a couple of minutes, then add heavy cream. Stir mixture well, then add rosemary sprig.
6) Lower heat to med-low and allow cream sauce to reduce by half or until thick enough to coat back of a spoon. This should take about 5 minutes.
7) Allow cream sauce to cool for a few minutes off the heat, then serve sauce with your steak. Enjoy!!!
Note: Cream sauce will boil over if heat is too high. Also, if using thinner steaks, sear steak for 1-2 minutes per side for med-rare to medium doneness.

Got me a cheap smoker (dynaglo) as a gift. And it does ok. The old block smoker tastes better in my opinion. Any thoughts? No briquettes, wood only!

29:06 I have stick burner and barrel now. My LSG meat tastes like fine wine. The smoke/meat flavor is smooth and clean. The meat on my Barrel House tastes like the greasy corner diner grill hasn't been cleaned in forever even on my brand new barrel. It is still a savory flavor from the Barrel House and not disagreeable at all. It just hits your taste buds harder and heavier than the offset.
