✨Ingredients✨
1kg Chicken
2 Onions
1 Red Pepper
1 Tin Chopped Tomatoes
1 Tin Kidney Beans
1 TBSP Olive Oil Vinegar
1 TBSP Garlic
1 TBSP Paprika
1 TBSP Cumin
1 TBSP Marjoram
1 TBSP Chilli
200ml Chicken Stock
Tomato Purée
Salt & Pepper
✨Method✨
🥷I used a ninja cooker but you can do this in a pan on the hob and slow cook if you don’t have one
🌶️ Sauté chopped onions and peppers in the oil until soft and then add in your paprika, chilli, cumin, garlic, salt and pepper.
🌶️ Let the vegetables soak up the spices for a couple of minutes before adding in chicken and browning.
🌶️ Next add your chicken and leave to slow cook or pressure cook in the ninja for 10 min and use the quick release after.
🌶️ Next remove the chicken and add your kidney beans, tomato purée and marjoram and allow it to reduce.
🌶️ Whilst you’re reducing the sauce shred the chicken and when done add back to the sauce for a few minutes to allow it all to mix and blend.
🙌🏼 I served mine with wild rice and broccoli but would also work well in wraps or tacos!

Spend a Sunday afternoon with me 🌤️ and see how I prep for the week ahead 🥦🍗🍚. As a busy mum with two jobs 👩💼👩👧👦, if I was to pinpoint just one thing that makes my life easier to support me with my diet and fitness goals 🏋️♀️💪, it’s meal prepping.
Meal prepping isn’t a buzz word, in fact it’s something I can thank my mum for teaching me from when I was little… back then we called it leftovers 🥘.
Every Sunday after shopping 🛒, I clear out the fridge, freezer and cupboards 🧹 and I don’t just fill them with random things I think I might want at the shop but instead with food that I have already chosen for the meals I am going to create 📝. This saves me time ⏰, money 💰 and waste 🗑️.
Today, while preparing my beloved Sunday roast 🍖, I also made a delicious chilli 🌶️ for one of my meal preps. By doing this once per week, I maintain a freezer full of various dishes 🍲, saving even more time in the future 📆.
And as my mum taught me, I am happily passing this habit to my daughter who asked to bake today 🍰. She did it all by herself, making me very proud 💖.
By spending just 2 hours in the kitchen, I have created meals for 25+ days 🗓️. That’s 25 days of spending hardly any time in the kitchen 🎉.
If you are not a meal prepper yet, don’t think of it as a huge chore. Just double your ingredients and voila, you’ve created a meal prep 🍱.

Nandos 🌶️ chicken fake away with spicy rice 🍚
✨ Ingredients ✨
🍗 5 x Chicken Breast
🧀 1 x Mozzarella Ball 125g
🌶️ 1 x Nandos Marinade Bottle
🫒 1 x tbsp Olive Oil
🍚 300g Rice (Wholegrain)
🧅 1 x Onion
🫑 1 x Pepper
🫛 150g Frozen Peas
1 tsp Tumeric, Praprika, Garlic, Chilli
600ml Chicken Stock (Oxo cube is fine)
✨ Method ✨
1. Marinade chicken in Nandos sauce - leave for at least 30 mins
2. Remove chicken and make slices & stuff with mozzarella - coat the remaining sauce on the chicken & air fry for 15 mins (or cook until golden & cooked through in the oven.
3. Whilst chicken is cooking prepare your rice.
4. Add oil to the pan and add chopped onion & pepper, pop the lid on a cook for a couple of minutes until soft.
5. Next add in your spices, mix and put the lid back on for the veg to soak up the flavour for a couple of mins.
6. Next add rice & chicken stock, stir & put the lid on. Leave for 7 minutes before adding the peas on top.
7. Leave for another 3 mins before removing the lid and stirring, leave to simmer if needs be until all water has reduced.
Serve and add some extra greens 🥦
