If you love Liverwurst, you will love this homemade version. It is simple to make and requires basic ingredients that most would have on hand. Please note that we do use canning jars in lieu of putting the mixture into Natural Casings, this is only to cook the mixture, it isn't to make it shelf-stable. You must refrigerate or freeze. INGREDIENTS 1 pound ground pork 1 pound beef liver 12 oz. bacon 6 cups water 4 bay leaves 4 whole allspice 1 large white onion 3 garlic clove 1 large red onion 1 T salt 1 tsp. pepper 1 pinch ground allspice ¼ tsp. fresh nutmeg 1 tsp. marjoram ½ tsp. thyme INSTRUCTIONS Cut bacon into pieces, start frying it. Add in chopped onions and garlic. When bacon is about 3/4 cooked, add ground pork, liver, bay leaf, 1/2 of spices and water. Bring to simmer. Cook on medium heat for 1 hour. Remove the liver and other meat from the pot and place them in the blender. Reserve 1-2 cups of the liquid Add the other half of the spices & 1/2 cup of the cooking liquid to the blender and mix to a smooth texture. Add more liquid and blend longer if you prefer a smoother, softer texture Fill into sterilized glasses. You can store these as is for up to a week in the fridge. If you want to keep the liver sausage for up to a year, cook the jars. The amount of time it takes to preserve the liverwurst depends on the size of the jar. It takes about 2 hours at 212° F for half-pint jars. Do you need a simple and economical cone for processing Turkey's? We turned an old fabric grow bag into a Turkey Processing Cone by simply cutting a 4" hole in the bottom and used a heavy-duty Carbiener Clip to hook the handles. Using the iOverlander App we found this camping spot at Green Township Community Park in Fortville, Indiana. Although camping in Fortville, Indiana with our Off Grid Cargo Trailer was only 23 miles north of Marion County Fairground, it did get us a little closer to home and allowed us to recover from the busy weekend at the Indiana Homestead Conference. This was a nice spot Sonya found because it had showers, which saved us some time from warming up our own water. I added a Winter Windbreak for our Chicken Coop to keep out the snow and reduce the breeze into the Coop. I repurposed our Chicken Tractor to be a breezeway for my birds. It always amazes us that people want to know what we have in our Freeze Dryer. We often hear, OH, I didn't know you could Freeze Dry that. Sonya Learned to make Ajvar over 30 years ago when she worked for a Serbian Bakery. The old guy "Uncle" showed her how to make this amazing Roasted Red Pepper Sauce. They enjoyed eating it over eggs, on crusty bread and on meats. We have since used it to make an amazing Creamy Roasted Red Pepper Soup and Roasted Red Pepper Lentil Soup. It adds an amazing flavor to any dish and stores great canned up. Makes: 4-5 half-pint jars (8oz) Processing Time: 15 Minutes Hot Water Bath INGREDIENTS 1 ½ lbs Eggplant 2 ½ lbs Red Peppers 1 Head Garlic 1/3 cup Olive Oil 2 tsp Salt 1 cup Apple Cider Vinegar (at least 5% acidity) DIRECTIONS Prepare boiling water canner. Heat jars in simmering water until ready to use, do not boil. Wash lids in warm soapy water and set aside with bands. Preheat oven to 400°F. Lightly oil 2 baking sheets. Slice eggplants hin and drizzle with a little oil or cut in half, place skin side up on a baking sheet, and pierce skin a few times. Cut red peppers in half, seed them, place skin side up on second baking sheet. If desired, add optional hot red pepper. Roast together in oven until skin begins to char, about 20 minutes for peppers and up to 30 minutes for eggplant. Remove peppers from the oven and place them in a covered bowl to steam skins loose. Let sit for 10 minutes. Peel skins off, discard skins. Remove eggplant from the oven and let cool to the touch. Scoop eggplant flesh out, discarding seeds and skins. Using an immersion blender or a food processor fitted with a sharp blade. blend, eggplant, peppers, garlic cloves, salt and oil. Chop or puree on low, leaving the spread chunky or creating a smooth puree. TIME TO COOK! Scoop spread into a saucepan set over medium heat, add vinegar. Bring Ajvar to a boil, stirring constantly to eliminate splattering. CAN IT! Ladle hot Ajvar into a hot jar leaving ½ inch headspace. Remove any air bubbles. Wipe jar rim. Center lid on jar and apply band, adjust to fingertip tight. Place jar on the rack in boiling-water canner with simmering water. Repeat until all jars are filled. Water must cover jars by 1 inch. Adjust heat to medium-high, cover canner, and bring water to a rolling boil. Process half-pint jars 15 minutes, adjusting for altitude. Turn off heat and remove cover. Let jars cool 5 minutes. Remove jars from canner, Cool 12-24 hours. Check lids for seal, Label and Date Jars.
