Fajita Veggies

INGREDIENTS
Seasoning
• ¼ cup olive oil
• 1 tsp. garlic powder
• 1 tsp. onion powder
• ½ tbsp. paprika
• ½ tsp. cumin powder
• ½ tsp. chili powder
• 1 tsp. salt
Vegetables
• 3 small bell peppers, cut into stripes of any color
• 1 medium onion, cut into half slices
• 2 medium portabello mushrooms, cut into medium pieces
• 3 cups broccoli florets
INSTRUCTIONS
• In a small bowl or measuring cup, mix together the olive oil and the spices. Then set it aside.
• Place the vegetables into a large mixing bowl and pour the spiced olive oil on top of them. Mix everything very well.
• Line a large baking sheet with parchment paper and evenly spread the vegetables out on it.
• Roast the Fajita Vegetables at 450°F for about 20 minutes, or until the vegetables have softened and browned. Serve warm.

Simple Baked Cabbage

INGREDIENTS
• ½ medium cabbage (about 2 lbs.)
• 1 tbsp. garlic powder
• 1 tbsp. paprika
• 1 tsp. salt
• 3 tbsp. plant-based or regular butter
INSTRUCTIONS
• Cut the cabbage into quarters, and then cut out the core. Slice each quarter and then cut it crosswise to create thin shreds of cabbage.
• Place the cabbage shreds into a large mixing bowl, and add the paprika, garlic powder, and salt. Melt the butter and pour it over the other ingredients. Mix well.
•Transfer the cabbage to a large baking tray. Using a wooden spoon or spatula, smooth the seasoned cabbage until it lays evenly across the pan.
• Bake it for about 25 minutes at 400 degrees Fahrenheit, or until it is cooked through and nicely roasted around the edges. Serve immediately.

Potatoes with Zucchini

• 4 medium Yukon Gold potatoes, peeled and diced (about 1 ½ lbs.)
• 2 medium zucchinis, diced
- For the Sauce
• ¼ cup olive oil
• 2 tbsp. mustard
• 1 tbsp. lemon juice
• 1 tsp. maple syrup or sweetener of choice
• 1 tsp. garlic powder
• 1 tsp. paprika
• 1 tsp. sea salt or to taste
• ½ tsp. pepper or to taste
INSTRUCTIONS
• In a small bowl, whisk all of the sauce ingredients together thoroughly. Then set them aside.
• Place the diced potatoes into a medium mixing bowl and pour half of the sauce over them. Mix well. Then transfer the potatoes to a parchment-lined baking tray and bake at 400°F for 20 minutes.
• Meanwhile, place the diced zucchini into the same mixing bowl (no need to wash it). Add the rest of the sauce and mix well.
• After 20 minutes, remove the potatoes from the oven and add the zucchini to them. Mix the vegetables together thoroughly and return the tray to the oven for another 25-30 minutes, or until the potatoes are golden and the zucchini have softened and cooked through.

Turkey Cabbage Soup

INGREDIENTS:
• 2 tbsp. grapeseed oil
• 1 small white onion, diced
• 2 large garlic cloves
• 1 tsp. minced ginger
• 1 lb. ground turkey
• 3 tbsp. soy sauce
• ½ tbsp. sriracha
• 2 medium carrots, shredded
• 1 small green cabbage, chopped (about 1 ½ lbs.)
• 6 cups vegetable broth or other kinds
• 1 tbsp. sesame oil
• ½ cup chopped scallions or chives
INSTRUCTIONS:
• In a medium pot, cook the onion in oil over medium heat, until it just starts to brown (about 5 minutes).
• Add the garlic and ginger, and cook for another minute.
• Then add the ground turkey and cook, breaking it up into pieces, until just cooked through and starting to turn golden.
• At this point, add the soy sauce, sriracha, carrots, cabbage, and veggie broth. Stir, cover with a lid, and cook for about 25 minutes.
• Lastly, add sesame oil and chives. Stir, turn off the heat, and serve.

Chocolate Tofu Pudding
This Chocolate Tofu Pudding is a healthy alternative to other pudding recipes. Smooth and chocolatey, it uses some surprising ingredients to achieve an amazing taste and texture.
Main Ingredients:
- Sweet Potatoes. Yes, you read it right. Baked sweet potatoes add sweetness and a nice texture to the pudding, not to mention the added health benefits. Baked pumpkin or even baked apples can be used here as well.
- Tofu. You'll need silken tofu. I prefer buying non-GMO, organic tofu.
- Cacao Powder. Don't confuse it with the sweetened cocoa powder, which has sugar added.
- Agave Syrup. You can use honey, or another sweetener of your choice.
- Vanilla Extract (Optional).
- Cinnamon Powder. This ingredient complements the chocolate taste nicely.
- Salt.
How to make this Tofu Pudding:
1. Bake the sweet potatoes. Place the sweet potatoes on the prepared baking sheet and bake for 45 minutes at 400°F or until the potatoes easily yield to an inserted fork or knife. Cool completely.
2. Blend. Scoop the flesh out of the sweet potatoes and add it to a food processor, along with the rest of the ingredients. Process until very smooth.
3. Chill. Divide the Chocolate Tofu Pudding among 4 to 6 ramekins and chill for at least 30 minutes. If you like, garnish each one with crushed cookies, chocolate shavings, or cacao powder before serving.

• 1 can (14.5 oz.) red kidney beans, rinsed or other beans
• 2 cans (5 oz. each can) tuna, liquid drained
• 2 medium cucumbers, peeled and cubed
• 1 cup cherry tomatoes, cut into pieces
• 1 medium bell pepper, diced
• ¼ medium red onion, diced
• ¼ cup parsley, chopped
• 2 tbsp. lemon juice
• 2 tbsp. olive oil
• 1 tsp. sea salt or to taste
• ¼ tsp. pepper or to taste
INSTRUCTIONS:
• Prepare the ingredients by chopping, cutting, and dicing the vegetables and herbs in this Healthy Tuna Salad. Then rinse and drain the beans, as well as the tuna.
• Place all of the ingredients into a large mixing bowl, including the lemon juice and oil. Mix well. Season with salt and pepper to taste and then serve.
